Hello there lovely people!
The week is halfway over already, can you believe it!? Where has this year gone?? Any who, I hope you've all had a great week so far, ready to finish it off with a bang- and if not a bang, then atleast with some delicious meals!!
Speaking of, it's Wedensday and on Wednesdays we share a full day of eats! WIAW style!! Thanks as always to Peas and Crayons for the creation of this weekly link-up and all the bloggers who participate and allow me to drool over their fantastic eats!
Now onto the FOOOD!
Breakfast: 7:10am
Back into the school routine of up early, brekky early, pre-packed lunches the night before and being super organised!
Holding no negative influence over my breakfasts though- they're still as big and delicious and filling as ever!!
A big bowl of blueberry/banana cheesecake steel cut oats with almond butter and peanut butter spread throughout!
There's nothing like a big bowl of oats to warm your heart!
This was also eaten after a short (but intense!!) blogilates workout- new favourite fitness craze of mine in case you were wondering! Cassey Ho is just so enthusiastic and motivating- half the time I don't even feel like I've been working out for that long because she would have been talking about the weather or something else!! ;)
So these oats were even more enjoyable as a result! (everything tastes better after a hard workout!).
Lunch: 1:40pm
Sorry about the blurry photo, but it was actually the clearest one I got (my camera has been acting up a bit lately) but in that tupperware container was some roasted-night-before cold potatoes and sweet potato (so good!), spinach, lentils and mixed four beans.
This lunch will never get old!
Snack: 4:00pm
When I returned home from school today I was rather ravenous, so I chopped up a granny smith apple and some honey dew and crunched on that with a mug of soy milk to wash it down.
Homework followed...
Dinner: 6:45pm
Cooking motivation= 0, therefore favourite low-maintenance meal to the rescue!!
Two boiled eggs with spelt bread toast soldiers (hommus and avocado) and some oven roasted eggplant, capsicum, zucchini and mushrooms rubbed with minced garlic and roasted for around 45 mins at 180 degrees celcius.
After dinner featured a piece of Lindt Excellence 90% chocolate because I am hooked!! So delicious! :)

WIAW #60 Deliciousness!
Happy Wednesday friendly friends! Do you know what makes this Wednesday extra happy? For me at least? Last exam! Yes! So stoked and ready to crash tomorrow... before heading back to school next week for the last 3 weeks of term. Yeah, I don't understand either!
Any who, along with studying like a boss I've also been eating like one too, because using one's brain requires lots of energy!! On that note, here's everything I ate on Tuesday, a rest day from exams :). Thanks as usual to Peas and Crayons for this awesome WIAW link-up each week!
Pre-run: 6:30am
I took advantage of not having to be at school by 8, so slept in a little bit and had a lovely 40 minute treadmill run (it's coming into Winter over here in Aus, in case you were wondering about the treadmill scenario) and because I woke up hungry, I consumed 2 dates prior to my run at 7:00am.
Breakfast: 8:15am
After stretching, showering and guzzling water my breakfast was cooked and I was HUNGRY!
In that delightfully yellow mug was a big serving of choc protein steel cut oats with some of my home-made cashew butter scattered throughout and on top. It was extremely delicious!
Warm, gooey, chocolate-y... what more could you ask for?
Lunch: 12:30pm
I wasn't hungry for hours after breakfast but as lunch time rolled round I knew I should probably eat something to keep that metabolism chugging along and keep my body happy so I set about making something I just really felt like:
A big ol' stir fry!
Firstly I sauteed off some garlic and onion with sesame oil, then I added in some chopped brocoli, capsicum, eggplant, zucchini and mushrooms for a few mins until tender, next I threw in some peas, corn, satay tofu, spinach and brown rice vermicelli (that had soaked in boiling water for a couple of minutes) and mixed it all together on high heat until combined and delicious!

We had a literature excursion type thing scheduled for this night at the theater to see a play called Glengarry Glen Ross, so I ate a pretty hefty snack to tide me over until around 8:00pm when the play finished.
Chopped cantaloupe, granny smith apple and a big mug of soy milk:
Dinner: 8:00pm
After the play (which was...interesting. The actors were amazing, but I don't think I fully understood what was going on... and every second word was a swear word) my stomach was growling and I took out these falafel type things I had made that afternoon:
Red kidney beans + lentils+cumin+paprika+ginger+pepper+steamed mashed pumpkin and potato- all whazzed up together in a mini food processor and baked in the oven (180 degrees Celsius) for around 40 mins.
Very tasty and filling!
And that's what I ate this past Tuesday!

Do you normally have a pre-workout snack? It sort of depends for me. My stomach can do just fine without one but I feel like my energy levels are significantly better with a little sustenance inside.

SUNDAY LINKS!!
Hello lovelies! Happy Sunday!!
Even though it's dark and dreary and rainy over here in Aus (I miss Summer!) my day still started off great with a 40 min treadmill run (For those of you who hate running on the treadmill- bring something to read, I use my iPad, the time goes by super fast!) that resulted in a lot of sweat! Followed by some delicious raspberry steel cut oats with peanut butter...
Basically a PB & J bowl of oats :)
Raspberries:
Plus 1 thinly sliced banana, around 1/2- 2/3 cup steel cut oats and a sprinkle of chia seeds:
Cooked with 1 cup almond milk and 1 cup water until all the liquid's absorbed.
PB in the bottom of the mug and in the middle of the oats for even coverage- IMPORTANT! :D
Top it off with the rest of the pretty pink oats and more peanut butter and you're good to go:
Even though it was bucketing down, it wasn't too cold outside, so I enjoyed my wonderfully late breakfast outside listening to the rain :) Ahhh Sunday- you are awesome!!
