Sunday Love! And cereal ;)

Happy Sunday friendly friends!!

First-things-first: BREAKFAST (Because breakfast always comes first!!)

I was kind of unsure about what to have this morning as Sunday morning pancakes just didn't sound appealing (no judgement- it happens sometimes!) so I took a quiz and it told me...

 Cereal:

Yep, cereal. At first I was like, I don't really own any cereal. And then I was like, well I'll make a Steph version.

Enter breakfast:
 Started off with the thick, purple, creamy milk:
1 frozen banana + 1 handful frozen blackberries + 3 spoons greek yoghurt (optional)- whazzed up in a food processor until smooth- Then placed in the freezer for around 20-30mins to harden up a bit)

Next came the chunky, fugdy, nut-buttery cereal:
A mix of almond butter and peanut butter granola (note the darker granola on the right= almond butter)

And therefore, my breakfast of cereal and milk:

Also, on an awesome note, look what's back:
ALL THE SUN! I love it!!

So, yes, my day started off with 'cereal' and 'milk' Steph-style. Seriously better than the original!

WIAW #72 Yum-tastic eats!!

Happy Wednesday everyone! I hope you're all having a great day and are eating/have eaten/ will eat something utterly delicious. Because everyone should eat something delicious. It's a law. Seriously.

And if I'm somehow mistaken and it isn't a law.... it should be.

Okidokie, now onto...

THE FOOD!! On Wednesdays we wear pink share our daily eats. So let's go. Thanks as always to Peas and Crayons for this awesome link-up!!

P.s. these eats are carefully selected from Monday :)

Breakfast: 7:25am
The day started off with some lovely yoga! Recently I've been getting into yoga with Fightmaster yoga on Youtube- super fun!

And then I was hungry. So I ate food.

Inspirational? I try.

Smoothie bowl!!!

Smoothie:
 Frozen banana + frozen zucchini + greek yoghurt + frozen blackberries + spinach + water- whazzed until smooth and paced in the freezer to harden up a little.

Meanwhile; granola cooking and smelling up the house with deliciousness:
 If you can tell by the picture there were two different nut butter granolas that I put together; peanut butter and mixed nut butter. So goooood!
 After hanging out in the freezer for a while:

 + mixing up the semi-frozen top with the rest of the smoothie
 = happy Steph!

 Breakfast was good!

Snack: 11:00am
Guys, I finally changed things up for my snack!

But you and I both know I didn't.

Peas. For the win.

Lunch: 1:15pm
T'was also a good one:
 Coconut oil roasted taters (baby and Japanese white sweet potato) spinach and a veggie and quinoa veggie burger.

 Nom.

Snack: 3:45pm
A sliced up pear (too soft, I prefer suuuuper hard ones!) with a mug of soy milk:
 Just what I needed. I was HUNGRY!

Dinner: 6:45pm
Dinner was another good one. I wasn't feeling too great and if I even pictured grains/ bread I felt sick. So I cooked up what sounded good!
 ALL. THE. VEG. Eggplant, zucchini, brussels, broccoli, capsicum, red onion mushrooms and tomato. Placed on a tray and roasted in the oven at 180 degrees for around 40-45mins.
 Topped off with two soft poached eggs and some sliced avocados:
 So good. And just because I think your neck needs a stretch, here's a pic of the awesome runny yolk 'sauce' of my dinner sideways! (not intended ;)
 After dinner I remembered that I was super hungry so I had a pretty big handful of almonds :P

Cherry's back baby!

Hi folks on this Marvelous Monday! Yeah, okay, Monday's may not be so marvelous... but getting through them is, so you might as well make Monday as great as possible right?

Okay, so maybe I feel a little bad for Monday- he cops a lot of smack, you know?

Any-who, this post isn't about Monday at it's hatred. Nope, it's about one of the relatively new finds of mine in the food department of my life that I expressed much joy about here. Wow, more than 2 months ago- did not think it had been that long!!

Yep, the good ol' cherry!

Now, when I think of cherries, I immediately go to Summer time, usually Christmas time and also ridiculously expensive that you have to beg and lead your mother with  the biggest Bambi eyes in order to get half a kilo to bring home. And Grandma always had ridiculous amounts of em' because she loved you so gosh darn much and didn't seem to register the ridiculous prices. Lot's of cherry-induced stomach aches thanks to Grandma.

So, it's safe to say that for my whole life cherries only entered my diet for around 2 weeks every year. Utterly soul-destroying, I know. What's worse? It took my whole life (up until this year) for me to realise you can buy fresh, frozen cherries that are exactly the same!! And they're PITTED!
Because I only had miniscule amounts of time with cherries, I didn't actually consider how much I loved their flavour, and in no way considered putting them in anything other than straight into my mouth from the bag.

Now that I know I can get a big bag of frozen cherries for around a tenth of the price, all year round? Well, cherries are making an appearance in all sorts of things!
Like steel cut oats topped with peanut butter with a side of banana yoghurt:
In the saucepan went 1/2-2/3 cup steel cut oats with 1/2 banana sliced, a handful of frozen cherries and 1 cup almond milk + 1 cup water- bubbled away for 20-25 mins until absorbed.
And the yoghurt was simply the remaining banana whazzed up with 3 big scoops of greek yoghurt and chucked in the freezer until the oats were ready.
Warm, gooey, rippled through with nut butter and also the beautiful flavour of cherries (also creating the delightful pink colour.)

The next day I whipped up some vanilla protein granola:

1/3 heaped cup rolled oats + 1 scoop vanilla protein powder +  1 teaspoon cinnamon + 1 heaped tablespoon nut butter + 1/2 cup almond milk. Almond milk and nut butter heated up together and then rubbed into oat mix and then baked in oven (180 degrees celsius) for around 15 mins.
And yes, there was a smoothie involved to become the foundation of my smoothie bowl. And it was cherry flavoured!
Into the blender went 1 chopped, frozen banana, a handful of frozen cherries, a handful of kale and a handful of spinach, 3 big scoops greek yoghurt and 1/2 cup water- whazzed until smooth.
I think frozen cherries in my smoothies are one of my favourite ways to use the cherries and seriously, if you have never tried a frozen cherry smoothie- drop everything now and do it!
I feel like with most fruits they're either entirely sweet or entirely tart. Cherries seem to have an equal balance of both, making them practically perfect!
And pairing beautifully with rich/ fudgy granola!
I'm sure a bag of frozen cherries will be a regular occurrence in my shopping trolley and I'm just super glad I found them! Although, I really need to pick up some more frozen mango... I think I'm having withdrawal symptoms (i.e. BIG cravings! ;)

So that's my little spiel about cherries over :) Monday's feeling better already, right? ;)

pineapple

Hello spiky friends!

Wait.

Spiky?

Why yes, spiky, like a...

PINEAPPLE!!

Ok, now that I have sufficiently confused you all with the best intro ever, how about I actually start making some sense. Yes? Yes!

In all actual-blog-post-related-ness, this post is about pineapples. (Surprise!)
I love pineapple. I love it on pizza, in a fruit salad, as a flavour for icypoles/lollies/ lip balm etc. (well when I used to eat packaged icypoles and lollies... and wear lip balm- geez I've changed a lot!) Most of all I love just snacking on a big ol' chunk of the sweet acidic fruit.

So, when I saw some beautiful looking pineapple halves for sale in the grocery store the other day I just had to pick one up and because I seem to have an obsession with buying all different kinds of fruits and freezing them... I did just that with my perfectly ripe coalesced berries!

What did I do with them you ask? Whazzed em' up to make some pineapple/banana fro-yo! 3 words: Y. U. M.
Ooh, hello there sneaky feet, photo-bombing my pineapple fro-yo pick!
Into the food processor went 1 frozen banana + 4 big chunks frozen pineapple + 3 spoons of greek yoghurt- whazzed until smoothy-smooth (scraping down the sides occasionally).
There's one thing about pineapple that I'm quite pedantic about- I love the fresh stuff! The tinned stuff is just a bit too sweet and concentrated in flavour for me. This fro-yo was perfect- perfectly sweet and perfectly tangy!
Breakfast didn't stop there though (even though a big bowl of this pineapple fro-yo would've been juuust fine). On top of the creamy awesome-ness was some peanut/coconut butter granola creating a sort of frozen crumble type thing:
In my granola was oats, oat bran, cacao nibs, cinnamon and pepita seeds, along with some peanut/coconut butter and almond milk too!
Yellow spoon to eat it all up with of course!
I would definitely recommend trying out some frozen pineapple, either on it's own as a sort of all-natural pineapple icypole, in a smoothie for some tropical flavour, or whazzed up with a frozen banana and greek yoghurt for some beautifully creamy and tangy frozen yoghurt.
Very good combination if I do say so myself!
