Turmeric Breakfast Recovery Truffles!!

Hi there friendly friends and happy Thursday- the day before the day when everyone gets excited for the weekend! You excited yet??

Anywho, today I have a recipe for you!! Yay!

I love exercise- it makes me feel good, sets me up for the day with a positive mindset and a really good feeling of exhaustion that's buzzing with endorphins and a fighting attitude to crush the day! However, as I am one of those people who can't crush said workouts with food in the belly (when I had to do track and races at school following lunch/ breakfast etc. I definitely did not feel/ perform my best my friends- and let's not even talk about how heavy I felt trying to run after school when I first started running back in year 9.

So after I crush it with the sweaty sweat sesh's I know I gotta refuel and the other day after a particularly brutal workout I knew I needed more than just fuel- I needed the optimum recovery fuel- plenty of protein, carbs, healthy fat and a whole bunch of other essential micro nutrients to nourish the body!

Enter this creation:
These, my friends, are vanilla protein turmeric oat truffles with a side of mango/zucchini (can't taste it I swear!) froyo:
The addition of the vegan protein powder and dashes of turmeric and cinnamon add so much to these balls, not only in awesome warmth and spice but also inflammation-reducing properties and muscle-rebuilding goodness!
Soft, fudgey, extremely decadent- and so healthy that you can eat these for breakfast and eat ALL OF THEM! That's my kind of breakfast:
The rich, smooth, delicious mouth-coating deliciousness of the truffles is perfectly cut-thorugh by the sharp, refreshing, sweetness of the tropical mango froyo and make the ultimate pairing for this complete meal:
Truly so perfect!
Alrighty, enough blabbering- onto the recipe!!

Vanilla protein turmeric oat truffles

Ingredients:
1 cup rolled oats
 2 pitted dates
1 scoop vegan vanilla protein powder
 a few big dashes of turmeric
 1 teaspoon ground cinnamon
 1 heaped tablespoon peanut butter (any nut butter with do)
 1 teaspoon maca powder (optional- adds a nice caramel-y flavour along with the dates)
 1/3-1/2 cup almond milk

Method:
1. Place all of the ingredients into a high speed blender and blend on high until smooth and combined
2. Scoop out and roll into balls, place on plate lined with baking paper and pop in the freezer for 30mins to set (obviously I was hangry so mine was more like 15 mins :P) Remove when ready and enjooyyyy!
For the froyo? Simply whaz 1 handful frozen mango + 1 handful frozen zucchini with 3 big scoops greek yoghurt until smooth and creamy, pop into a cup/ bowl and into the freezer until the truffles are set enough:
And to eat? I recommend the dipping action:

Ultimately it's going to taste good any way you choose to eat it so make it, eat it and thank me later!!

Brekky Round-up!



Hey guys! It’s been a hot minute since I’ve shared with you what I’ve been loving on lately in the breakfast front- and as you all know; breakfast is not only the most important meal of the day but just so happens to be my utterly favourite meal of the day.
For whatever reason, breakfast time is when my creativity is at it’s peak, my stomach is at its growliest and thus my creations/ random throw-together-of-ingredients-that-I-call-recipes appear
 Like for example, these super choc protein oat balls- the recipe can be found on my Instagram and I definitely recommend giving a try! (Insta name; Steph2chef)

Recently there have been quite the number of tasty delights to start my day (honestly, how can people skip this ridiculously delicious time of the day!?!) and yes, most of them mimic the taste of some kind of decadent dessert or another because that’s just the things my body seems to crave when I wake up in the morning (savoury brekky, nah, I’ll pass.)

So, what exactly have I been noshing on for brekky
recently??

Well, do you remember that time I went through the ‘cookies for breakfast’ phase? One morning I woke up and had the most intense desire for one of those muesli-esque, warm, crispy, chewy oven-baked breakfast cookies and then this resulted:

 Super quick and super easy- I literally just throw around 3/4 muesli into a bowl with some cinnamon and then some warmed up pb and almond milk (a heaped tablespoon PB and 1/2 cup almond milk) and stir together- onto baking tray, into oven at 180 degrees celsius for around 15 mins (until golden) and then nom!!

Utterly delicious, filled with all the good stuff and a perfect way to start off the day!
Eaten alongside some refreshing and creamy mango froyo (frozen mango, frozen zucchini, greek yoghurt whazzed up until smooth and creamy)  it truly was a perfect breakfast!


Now, my two other obsessions came back strong these past few weeks as well: Oats and green smoothies!

 So many variations happening over here but these delightful beauty (that I just so happened to whip up today following arm-day- hence filled with protein!!) has taken the ranks as my favourite yet; A huge vanilla protein banana green smoothie!! 2 large frozen bananas, handful frozen zucchini, 4 chunks frozen spinach, 2 big scoops greek yoghurt, 1 scoop vegan vanilla protein powder, 1 heaped tablespoon crunchy PB- whazzed up in the Vitamix until smooth thick and creamy delicious!!
 And yes, this was basically just half the amount I made... the rest was eaten staright from the blender- perfect! :D :D
If I didn’t wake up craving the refreshing, creamy, thick, volumous delight of a green smoothie:


Than the body decided to wake up craving a big bowl of hearty, wamr, gooey, sweet oats, of whatever flavour:
 Like these gloriously pink cherry cheesecake oats filled with oats, 1 thinly sliced banana, frozen cherries, almond milk, water- cooked up on the stove until absorbed and thick and then somew greek yoghurt stirred through at the end- NOM!
 Crucnhy PB layered throughout (even coverage my friends!!)
 And lovingly devoured!

 Chocolate oats are probably one of the most decadent breakfasts I have during the week because they atste just so rich, gooey and fudgey that it just feels like your eating a fudge brownie warmed up and served to you with fresh bananas and love:
 But these guys are filled with protein, fibre, wholegrains, antioxidants and very minimal fat/ sugar etc.
 With an ingredient list of rolled oats, sliced banana, raw cacao powder, vegan choc protein powder, cinnamon, almond milk and water- greek yoghurt stirred in at the end- this brekky is almost too good to be true!
 Note the almost! :P :D

I think it must be a texture thing whereby my body flicks from creamy and slurp-able to thick, warm, gooey oats eaten with a spoon and nut butter drizzled throughout, melty along the warm oats, creating a pool of the most deliciously nutty taste.
 These simple banana oats made with rolled oats, sliced banana, maca powder, cinnamon, almond milk and water truly hit the spot the other day and the simple banana slices and pb throughout just topped it off perfectly!

Of course there have been some other experiments involving not smoothies or oats or cookies such as these delicious vanilla mint protein balls (throw-back whoo!!)

Eaten alongside a delicious cherry smoothie for another perfectly refreshing pairing.

 As these are make-ahead and you simply pop them in the freezer until you want them- brekky can come together in no time at all (sometimes just what I need after my fasted morning workouts that leave me a little on the... HANGRY MONSTER side!! :P
 Just leave to thaw for around 15-30mins (depending on how soft you want them) and them nom them right up!

 High protein, filling fats, sweet, delicious and oh-so-good-for-you, what more could you want??
 I had a few other breakfasts tp share with you but I have noticed this post getting a little on the lengthier side, so I shall save those up for another day!

In the mean time- keep eating glorious, delicious foods that nourish your body and your soul and make sure you make your next brekky a great one!

Athletic eating.

Hello, hello friends.
No don't worry I haven't started eating competitions or stuffing my face in an athletic manner, or taken up sprinting and javelin whilst eating. What I meant by athletic eating was what I ate on the day of my school's athletic carnival :)

You might remember from this post and this post me mentioning that I couldn't run because I did something to my ITB band/ muscle thingy down my leg.

Well, I had signed up for 4 different running events and long jump before this happened, so with the help of my wonderful physio's remedial massage (I have bruises to prove how wonderful) and some acupuncture and some taping... I could compete!
Good to go!
I went equipped with a little chemist in my bag. Voltaren gel, snap ice packs and extra tape. 
The real way I prepared myself for today? A good hearty- DELICIOUS- breakfast:
 Chocolate steel cut oats and berry froyo (frozen berries whazzed up with greek yoghurt)

 Using this method, I heated up 1 tablespoon of cashew butter and spread it round!
Full of protein, complex carbs and good fats- I was ready to start the day!

How does overnight oats mixed with mango fro-yo sound:

 In relation to how I did in the carnival... not great to be honest :D
I sort of expected it... I didn't lose anything (second last isn't losing!) and I did come 4th in the 800m (out of like 25 girls) so I guess I'm sort of happy, it just means no inter-school this year. I was pushing it competing anyway!

But there you have some great brekky's for a busy/ tiring/ energy requiring day!

Eight fears

In continuing with my 10-day-you challenge, I've come up with a list of my eight fears... it was seriously a hard thing to do, but I did it!

10 Day You Challenge
8. Coming in at number eight is... Horror movies- these don't just scare me- they are a fear!I should probably say I have a fear of the whole genre of horror- not just movies, it's just when you're reading a book and it says the axe murderer opened the door, you can make yourself picture unicorns and bunnies... in a movie, not so much.
7. Death. I'm sure the majority of people are scared of this and I really don't want to be (which is why it's only 7th on my list) but I'm not going to lie to you it's a fear of mine.

6. Deep water. Lots of people find this one strange when I tell them it's a fear of mine, but even just looking at a photograph of deep water in the middle of no where gives me shivers...

5.I guess in tying in with deep water, another fear I've had ever since I can remember is tsunamis. I literally can't look at this photo for more than a five seconds. Literally.

4. Exams- I'm at the ripe old age where I'm preparing for my super-duper important exams. I know in the scheme of things, they shouldn't be this far up on the list, but just the fact that I'm going into them now makes them seem even scarier than horror movies :O
This may or may not be what I'm most afraid of!

3. Cockroaches- they make me physically ill

1. My top one would be losing close friends and family, or having to watch them suffer. Every night before I go to bed, they're the last people I think of and I send them happy and healthy thoughts for tomorrow.

But really we all know what my real #1 fear is:

Something that doesn't scare me- chocolate oats and mango froyo :) :) :)
