Satisfy those cravings!

There is no denying it... like millions of other food bloggers out there... I.LOVE.OATMEAL!
Just a quick scan through my camera's memory card sums it up perfectly:
You can find most of my recipes on the breakfast page, if you too are addicted to oats!
Why am I suddenly obsessed with oatmeal.. well, in the last few days I've had some pretty tasty bowls... well-mugs and jars (naturally!)
Like overnight oats in a jar:

I filled the almost empty almond butter jar 3/4 of the way with muesli and some chia seeds, then added oat milk to the top and stirred. Leave in fridge overnight!
I also had a banana smoothie on the side- nothing special; banana+milk+yoghurt

Give it a stir up in the morning.. and voila!

My second oat romance was this morning- I wanted CHOCOLATE! Never get between a girl and her chocolate!



Chocolate oats, with coconut butter and banana and also some cocao nibs stirred in :)
There was quite a bit of chocolate in there!
Recipe is loosely- 1/2 cup rolled oats, 1 cup milk of choice, 1 tablespoon raw cacao, 1 scoop choc protein powder, a dash of cinnamon, 1 thinly sliced banana,  some coconut butter and some cacao nibs :) Heated on stove and whisked furiously until desired thickness is reached!

Thinking Out Loud Thursday!

Hello people! And welcome to my first ever Thinking Out Loud Thursday- hosted by Spoons- where I can ramble on about anything and everything! Finally!

So lets get started shall we?

Did you know it was National Running Day yesterday? Yeh, I didn't! And so I decided to have a rest day! I made up for it this morning though- in the wee hours of the morning (5:30am!) and ran my little heart out- I'm always a little late with everything it seems!
So what did I do yesterday?
Well, I ate a fabulicious breakfast of overnight greek yoghurt oats, with some home made peanut butter cheerios and a mango drizzle... and once again left my cameras memory card in the computer.
So- no pics, and no recipe... yet!
My exercise may not have been running yesterday.. but it was the high ropes course at school! In our out-door education program we get to do rock climbing and belaying and all that kind of stuff, so I got to act all awesome and walk on a beam and wire, almost touching the roof! I also became my inner-spiderman coming down... #upside down :)
 Yep- that was me :)
I also had never belayed before (which is like pulling the rope so there's is no slack and making sure you lock off if the person climbing falls..) and probably didn't pick the best time to tell the climber this- as she was climbing the ladder
Hmmm.. that's a pretty scary cat..
That's better- does anyone else love lolcats as much as me?
Well that's the majority of stuff that's been whizzing about in my brain, there will be recipes soon- if I remember my memory card! :)
Now I will leave you with some fun facts:

PB+J!


Guess what happened today? One word. Cockroach. Worst word ever invented.
OK, maybe I should explain a little.
I was putting on my jacket at school and felt something funny as I put my arm through my sleeve, I didn't think it was anything- a few minutes later something crawls out onto my hand- COCKROACH! I scream and jump (and very nearly cry) and keep screaming and jumping for a good 10 minutes until I'm certain there is nothing left lurking in my jumper.
BLEECCHH!
It was sort of a coincidence that on peanut butter fingers blog post today was a list of 8 fears and her number 8 was cockroaches!
Well that was a bad part from today, but I like to focus on the good and as usual the good was...
BREAKFAST!
That my friends is my bowl of overnight oats inspired by the classic PB+J sandwich!
So really it's peanut butter and berry over night oats with banana!
Ingredients:
3/4 cup muesli
1 tablespoon chia seeds
1 cup milk of choice (I used oat milk)
1 banana
1 tablespoon peanut butter
1 handful of mixed berries (fresh/frozen)
extra milk

Method:
1. The night before make your overnight oats by placing the muesli, chia seeds and milk in a bowl, stirring and placing in the fridge overnight.
2. The next day you will have this:
Give it a little stir:
3. Now you can make your jam by placing the berries in a small bowl:
and heating in the microwave for about 1 minute (you may need more depending on microwave)
4. Place in a small food processor along with a few chunks of banana for sweetness:
5. Whaz until smooth:
6. To make your peanut butter mixture, place peanut butter and about 1 tablespoon of milk in a small bowl and microwave for around 20 seconds, stir to combine:
7. Place in the washed food processor with some banana and whaz until smooth:
8. Cut up rest of banana, add to overnight oats (I also added some multi-grain cheerios) then lightly stir in jam and peanut butter mixtures to create a sort of swirl effect
Enjoy!
Next time I think I'll freeze it in my icy-pole molds and create PB+J oat ice creams!

FOOD!-GLORIOUS-FOOD!

I'm pretty sure I've mentioned this before (like a bajillion times!) but... I'm gonna say it again- I.LOVE.FOOD!
I love cooking food, I love eating food, I love coming up with new crazy ideas on how to create the food I love eating.
Only problem is- time! Time seems to have a way of flying by when you have school 5 days a week, play an instrument- about to start learning another one, do jazz and contemporary, are on the cross country team, have to coordinate a mural project for school, do a peer support program with the new year 7's, work through the Duke of Edinborough award (google it- it's a great program) and also keep up to date with homework/assignments/tests- where does cooking come into all that?
I will admit it's hard!
But planning is important- so is taste! I am not sacrificing taste for anything- so when I'm time short.. I simply resort to quick-to-prepare foods :)

Like the other night's dinner..
2 boiled eggs, some Vegemite on 100% rye toast and a sweet potato and pumpkin mash with mixed beans= Quick, easy, healthy and delicious!

Lunch at school...

Simple salad with raw veggies and some grilled one-minute-polenta mixed with sundried tomatoes.

On early cross country training mornings...
Creamy overnight oats ( muesli+mashed banana+nutbutter+cinnamon+chia seeds+splash of milk, left in fridge overnight)

One last thing... remember my latest WIAW? The fail that it was that ended up a What I Wish I Ate Wednesday ?
Well, today I actually ate what I wished I ate for lunch on Wednesday!
My take on Running with Spoons- Pumpkin chili mexican scramble!
In mine, I used both pumpkin and sweet potato and seasoned it with taco seasoning. I also used 2 whole eggs mixed with hommus:) Yum!

Any-who that's just a glimpse into how I cook/prepare on minimal time! Luckily it's the weekend, which equals time!
And time.. equals COOKIES! Chocolate-chip cookies!
Ingredients:
1 cup muesli
1 banana
chia gel- 1 tablespoon chia seeds mixed with 1 tablespoon milk (I used oat milk)
1 tablespoon nut butter ( I used peanut butter)
optional- 1/2 dried fig chopped

Choc chips:
 1 teaspoon coconut butter
1 teaspoon milk (I used oat milk)
1 teaspoon raw cacao powder
dash of cinnamon

Method:For choc chips
1. Place coconut butter and milk in small bowl and heat for 15-30 seconds, until warmed, stir to combine:
2. Stir in cacoa and cinnamon and drop onto a plate lined with baking paper with a spoon:
3. Place in freezer to set

For the cookies:
1. Preheat oven to 180 degrees celsius, line a tray with baking paper
2.Mash banana in a bowl, add nutbutter and microwave for 15 seconds, stir to combine
3. Place muesli, chia gel, banana mixture, figs and set choc chips (you can roll them into balls) in a bowl and stir to combine- I used my hands :)
4. Roll into 4 balls (or 2 MEGA cookies!) and place on tray:
5. Bake for 10-15 mins, until golden and slightly hard:
6. ENJOY!
I had mine with a smoothie of frozen mango, frozen berries, spinach and oat milk:
Nothing like a plate full of cookies sitting on your lap in the morning!

WIAW #3

Morning Sunshines!
It's that time again (well for the third time ever for me!)...
WIAW! And thank you to Jenn for hosting!
So I kicked the morning off (after sleeping in a little!) with some already-prepared-for-me overnight oats.
Here's how you make em'- picture style!
Night before:
Muesli and chia seeds:
 Milk to cover + little stir
Morning after:
Stir it up, add some fruit:
Eat!
 Preferably in a pretty cup :)
Pretty massive cup that is!
Then lunch rolled round (this brekky kept me full for hours!) and I wanted pasta! After seeing this recipe, there was no going back...
 This was gluten free pasta, with steamed beetroot, sweet potato and parsnip, with a pumpkin and hommus sauce, spinach, peas, lentils and roasted tomatoes and mushrooms! YUM!
I love eating lunch outside!
Then I found my shadow...
Then I remembered I was hungry!
By about 4pm the hunger was back.. so I had some yummy fruit and a glass of soy milk:
For dinner I got my creative socks on again and created this Mexican flavoured bowl:
That was quinoa cooked with some mexican chilli spice with some more roast beetroot, tomatoes, capsicum, mushrooms and eggplant and also some spinach and mixed four beans mixed with some spicy Mexican salsa! YUM!
Does anyone else LOVE roast eggplant?
