WIAW #14

The weeks fly by don't they? Here I am once more with another WIAW, linking up with Peas and Crayons!
As usual, this is a WIAT post for me as it's pretty hard to get to the link-up in time with the Australian/American time differences, so I document Tuesdays eats!
Here we go!
Breakfast!
Featured the biggest, yummiest green smoothie ever!
It was really my favourite tropical dough boy smoothie (inspired by Kath Eats) I just added a few extra things:
1 chopped frozen banana, 1 handful frozen mango chunks, 1 cup rice milk, 1 handful kale, 1 handful spinach, 1 serving of overnight oats, (1/2 cup muesli+3/4 cup milk) a spoonful of peanut butter and a small dash of cinnamon.... whaz!

I couldn't fit it all in my jar ;)
Lunch:
I simple couldn't go past my home baked spelt/rye bread sitting on the counter staring at me, so I made a sandwich:
Spread with hommus, topped with a grilled lentil burger, salsa, spinach, grated carrot, tomato slices, capsicum and avocado, topped off with another hommus-y piece of bread :)
People often ask me if I have a big appetite. My reply is always no.
I have a huge appetite :)
Snack:
A nectarine with some soy milk
My camera appeared to be more interested in my soy milk and straw than the fruit!
Dinner:
I made a delicious roast veggie, mixed bean and nut salad :)
It had roasted heirloom carrots, sweet potato, potato, pumpkin, swede, beetroot and in the last 15 mins some vine ripened tomatoes. Simply drizzled in olive oil and baked at 180 degrees celsius for 45 mins.
Then mixed with some massaged kale (I simply rubbed the kale so it was softer) some drained and rinsed chickpeas and red kidney beans (they were sitting in my fridge doing nothing) and some chopped mixed raw nuts:
 Yum!
There you go, another full day of colourful, delicious eats. Interested in what others are noming on? Head on over to the link-up later on and see!
Have a great Wednesday everyone! :D

Holidays, holidays, holidays, hey- hey- hey!

Name that song! Oh wait no... I think it's just called Holidays... :)
Any-who, that's what it is for me! No school!
None of this: (well for 2 weeks)
How did I celebrate? With some delicious food (and awful pics- sorry!)
On the last day of term I made the most delicious layered, parfait, something or other:
It was also about 6:45 am so excuse the flash :)
The ice creamy thing was a frozen banana whazzed up with two spoons of greek yoghurt and about 1-2 tablespoons of almond butter (slightly melted)

Sooo creamy good:)
Then it was layered with some overnight oats and fruit:

And... my camera died before I could get a spoon shot!
Then for dinner I treated myself even more with... PIZZA!

Based off this recipe.
Then for my first holiday brekky I made...
Apple cinnamon cheesecake oats with a side of frozen mango smoothie! Super simple +super yummy!
I placed 1/2 cup oats in a saucepan with some chia seeds, sprinkle of cinnamon and 3/4 chopped apple + 1 cup of almond milk and let thicken before I started stirring until it reached my desired thickness. I then stirred in 2 spoonfuls of greek yoghurt and topped with another small sprinkle of cinnamon and some almond butter:
The mango frozen thing was simply 1 handful of frozen mango whazzed with 1 cup of soy milk- again sooo easy and sooo good!

And my camera wqas charged this morning so.. I got some spoon shots:

Now, back to relaxing!
I hope everyone has a fab Friday! (TGIF!) :D

Oats-sorta oats + smoothies!

If I had to ask myself what my favourite breakfast was I couldn't answer it with just one... well I could but I don't think this one counts- it's a million-gazillion times better than any other breakfast ;)

My favourite breakfasts however, is a tie between smoothies and oats, which is exactly what I've been enjoying lately!
Kicking things off with CHOCOLATE!
I made some simple chocolate oats (oats+rice milk+ raw cacao powder+ cocoa nibs+ dash of cinnamon+sprinkle of chia seeds) then I remembered this ice-cream- where I added greek yoghurt and it tasted just.like.cheesecake!
So I wanted to make some chocolate cheesecake oats :)

blob, blob, blob
Stir, stir, stir
and bubble away until thickened.
Plopped in a mug and covered in almond butter... mmm
Never had cheesecake (oats) for breakfast. T'was good :)
Especially with a nudie :)

Then I made...
A tropical dough boy smoothie- inspired by Kath from Kath Eats Real Food!
I made some overnight oats the night before:

Then in the morning got out the rest of the stuff:
Overnight oats, 1 frozen banana, 1 handful of frozen mango, (didn't end up using the greek yoghurt- too much of a good thing, right? Nah!) 1 tablespoon almond butter and about 1 cup of rice milk (depending on desired thickness)
All placed in a blender and whazzed!
Deeee-lishhh!
All natural sweetners, vegan, cake-y(?) yum!

Lastly was this mornings breakfast of oats in the form of granola and smoothie in the form of PB+J
Inspired by this recipe.
I made the granola by preheating oven to 180 degrees and melting some coconut butter with rice milk in the microwave for about 25 seconds:

Bit hard to see, but there was about 1 tablespoon coconut butter and 1/4 cup rice milk.
Then, with your hands you rub it in to some oats and dried fruit and nuts (as much as you want)
Place on baking tray:
Bake for around 15 mins:
and cool while you make the smoothie.
The smoothie was just 1 banana + chia seeds + 2 dollops greek yoghurt + 3/4 cup frozen blueberries+ 1 1/2 tablespoons almond butter+ 1/2 cup rice milk, whazzed:
Pour into mug (mugs are cool)
Top with coconut granola and any leftover banana:
Enjoy!
I sure did (my favourite part was the colour.. but then I ate some... my favourite part is the taste :)

I hope everyone has a fantabulous weekend, enjoys the extra time and maybe make a delicious breakfast! :D

WIAW #11

Yay! It be Wednesday already? That's cool, it means I get to share with you my crazy-delicious-colourful-veggie-filled-delicious-savoury-sweet-delicious eats!
Shall we began? (Thanks Peas and Crayons for hosting!)
Breakfasts : (I'm sharing- What I ate Wednesday & all week!)
At the beginning of the week, I wanted oatmeal.. and sort of inspired by this recipe, I made some of this:
It was simply rolled oats + sliced banana + chia seeds + coconut butter + vegan vanilla protein powder, heated on stove with some oat milk until thick (but not dry!)
With a side of..
Mango fro-yo!
And of course, this:
Plus this:
Equals this..
Seriously guys- I have dessert for breakfast everyday!
Next up was an all-time favourite- yep you know what it is...
A peanut butter and banana toastie!
With blueberry frozen yoghurt this time:
1/2 cup plain greek yoghurt + 1 cup thawed blueberries (I had to thaw my frozen ones) whazzed up in a mini food processor :)

You had to see this coming!
Lastly today's brekky- what I actually ate Wednesday!
Overnight oats in a jar
plus a side of sliced apples and some banana cream (greek yoghurt and banana whazzed together!)
Yes, people- I am obsessed with greek yoghurt at the minute- it's the only dairy I can eat that doesn't anger my tum tum and it's awesome!

Now follow these steps very carefully!
Spread some of the 'cream' onto an apple slice:
 Keep going, layer after layer:
Then realise you have to much and plop it all on!
Yum yum!

Lunches:
Both of the lunches I happen to have photos of are sandwiches.. that are exactly the same excpet for the bread :)
This one was on a cape-seed roll from Bakers Delight
Grilled veggies, hommus, spinach, veggie patty and salsa- put in a sandwich press :)
That was on the weekend. Today, I woke up at this awesome time and made it again on my home-made wholemeal spelt bread!

Twas good.. but seriously guys, I do eat more than sandwiches! Yesterday I had a millet salad and the day before a big rice veggie bowl!
Snacks:
Yesterday, I wasn't overly hungry, but wanted something to hold me over til' dinner. Maybe some proetin powder and soy milk? But I have no protein shaker thing! Not to fear!

Works just as well! Simply add stuff, screw on lid and shake!
Today I had..

A pear and a tomarillo. Then I took one bite of the tomarillo and proceeded to feed it to my compost bin- blech! It sour and hard to eat- not good!
Dinners:
One night, my tummy was feeling well, so I had an easy dinner of tin tomatoes + beans topped with steamed greens topped with roasted potatoes:
Zumba night was cold roast veggies, quinoa and spinach:
Last night's pasta, chilli pesto, steamed veggies, spinach, peas and mixed four beans:
 Topped with vegan cheese :)
 And... that's it!
I hope everyone else had fabulous Wednesday eats and don't forget to head on over to Peas and Crayons to check out what everyone else has been nom-ing on! :D
