Lovin'on the breakfast front!

Hello friends!
Today I thought I'd create a post dedicated to breakfasts, because last week almost every brekky I consumed was deeee-lish!
I started off Monday with a simple-pimple brekky (Monday is the start of the week- a 'no thinking required' brekky is a must!) of two wholemeal crumpets topped smothered in cashew butter with a berry delicious smoothie (I couldn't help myself)
 The smoothie was simply 1 frozen banana, 4 large over ripe frozen strawberries (I bought a big punnet on the weekend) and a handful of frozen black grapes (just coz I thought they'd be good in a smoothie:) some greek yoghurt, oat milk and chia seeds- done!
 I love crumpets and hadn't eaten one for like 2 years prior to buying a wholemeal packet and freezing them a few weeks back.
 Yum!
Either Tuesday or Wednesday (I forget) I made oats :)
Using my sneaky little nut butter trick:

 I topped my bowl off with some banana cinnamon steel cut oats:
 With a side of strawberry (same strawberries as before- not frozen) yoghurt (cut up strawberries+ greek yoghurt)
One of my absolute favourites of the week was a banana mango thickie (extremely thick smoothie) topped with some cashew butter granola:
 In the smoothie went 1 frozen banana, 1 handful frozen mango chunks, 2 scoops of greek yoghurt and a splash of milk= super creamy deliciousness:
 Topped off with granola, similar to this one (kisses fingers like an Italian) perfecto:
 This definitely filled me right up!
Now onto my favourite breakfast of the week! OIAJ!
Choc protein overnight oats in an almost empty peanut butter jar with a side of banana yoghurt (1 banana whazzed up in greek yoghrut)
 The OIAJ were like eating a super rich, indulgent nutty dessert! To make:
fill a peanut butter jar about1/2 way up with muesli. Mix together in a seperate bowl about 3?4 cup milk, 1 scoop choc protein powder and 1/2 tablespoon raw cacoa- microwave for 40 seconds- 1 min, then stir until combined.
Add to jar of muesli, shake with top on, take top off and place in fridge overnight!


 Soooo good- I also nearly didn't finish this one it was so filling- but it tasted too good not too... I'll suffer through it! ;)

Athletic eating.

Hello, hello friends.
No don't worry I haven't started eating competitions or stuffing my face in an athletic manner, or taken up sprinting and javelin whilst eating. What I meant by athletic eating was what I ate on the day of my school's athletic carnival :)

You might remember from this post and this post me mentioning that I couldn't run because I did something to my ITB band/ muscle thingy down my leg.

Well, I had signed up for 4 different running events and long jump before this happened, so with the help of my wonderful physio's remedial massage (I have bruises to prove how wonderful) and some acupuncture and some taping... I could compete!
Good to go!
I went equipped with a little chemist in my bag. Voltaren gel, snap ice packs and extra tape. 
The real way I prepared myself for today? A good hearty- DELICIOUS- breakfast:
 Chocolate steel cut oats and berry froyo (frozen berries whazzed up with greek yoghurt)

 Using this method, I heated up 1 tablespoon of cashew butter and spread it round!
Full of protein, complex carbs and good fats- I was ready to start the day!

How does overnight oats mixed with mango fro-yo sound:

 With some bananas split in half and smothered in peanut butter?

 In relation to how I did in the carnival... not great to be honest :D
I sort of expected it... I didn't lose anything (second last isn't losing!) and I did come 4th in the 800m (out of like 25 girls) so I guess I'm sort of happy, it just means no inter-school this year. I was pushing it competing anyway!

But there you have some great brekky's for a busy/ tiring/ energy requiring day!

Another dough boy!

Hey guys! You may have noticed that ever since this post I have been a bit obsessed with smoothies lately! I first got the idea of the dough boy smoothie from Kath Eats. Check out her recipe page for heaps of flavour variations!
For today's dough boy, I decided to make a berry version!
Ingredients:
1 chopped frozen banana
1 big handful of mixed frozen berries
1 serving over night oats (see recipe below)
1/2 cup milk (I used oat milk)
optional- some greek yoghurt
Step 1.
Make overnight oats:
 I simply place 1/3-1/2 cup muesli in a bowl with 3/4 cup milk (oat milk) with a sprinkle of chia seeds. Give it a stir and leave it in the fridge overnight- simple pimple.
Step 2.
Place all the ingredients in a blender and whaz until smooth:

Yes this recipe was 2 steps and really simple- just the way I like it- especially on busy school mornings and after a sweaty workout :)
It's perfectly sweet (if a little too much for my tastes) and is super filling and yummy- also a well-balanced meal in smoothie form. Feel free to add spinach/ kale etc. for another nutrient boost!
I also happened to have a pinkish dinner too...
Yes, that is probably the biggest toasted wrap I've ever seen too!

Mean green fighting machine!

Yesterday I almost turned into something green...
It was quite scary.
You see, yesterday I ate quite a lot of green food, without realising and now, looking back at the pictures- oh my!
I'm just kidding! I love it when my eats turn out super green and super yummy wihtout any concious thought!
Take breakfast for example. I know you were all dying to find out what I did with my almost empty jar of peanut butter...
Overnight oats! And what's that sneaking into the shot?
A super duper green smoothie!
This was a new one I tired. See, I had bought some vanilla beans to make profiteroles filled with creme patissiere today and figured I might use one of the vanilla pods (seeds scraped) in my smoothie. So into the blender went 1 chopped frozen banana, 3 large scoops of greek yoghurt, a huge handful of spinach, a dash of cinnamon, some chia seeds and about 1/4 of the seeds scraped from the pod.. yum!
Wow, there is a lot of random stuff lurking around on our bench!
Lunch wasn't overly green, but it did have some!
I went to make a wrap using my mega-huge whole grain wraps, but unfortunately came to the conclusion that when wraps turn green, they might not be so healthy any more :) So i had to go with 2 medium sized whole grain wraps to satisfy my hunger :)
How did I sneak greens into this?
With spinach and avocado of course! There was also hommus, mashed sweet potato and pumpkin, a taco quorn mince thingy I made and some medium salsa. Wrapped and toasted. And devoured:

For an afternoon snack I had a green apple with some soy milk:
And for dinner, a random veggie-filled salad... it was super green!
 What was thrown into it? Some rainbow chard (I chose a yellow veined leaf) steamed then roasted brussels sprouts and okra, sauteed eggplant, mushrooms and zucchini, roasted medley tomatoes, steamed peas, drained and rinsed canelini beans and never-before-tried roasted chestnuts!
The chestnuts were super yummy! I simply split their shell with a cross using a sharp knife and roasted them for 20 mins at 200 degrees celsisu, then peeled off the hard outer shell and crumpled into the salad! Yum!

So as you can see, everything I ate yesterday was pretty green! I think I have to make up for it on the orange veggie side, so I can get back my orange-itis!

WIAW #14

The weeks fly by don't they? Here I am once more with another WIAW, linking up with Peas and Crayons!
As usual, this is a WIAT post for me as it's pretty hard to get to the link-up in time with the Australian/American time differences, so I document Tuesdays eats!
Here we go!
Breakfast!
Featured the biggest, yummiest green smoothie ever!
It was really my favourite tropical dough boy smoothie (inspired by Kath Eats) I just added a few extra things:
1 chopped frozen banana, 1 handful frozen mango chunks, 1 cup rice milk, 1 handful kale, 1 handful spinach, 1 serving of overnight oats, (1/2 cup muesli+3/4 cup milk) a spoonful of peanut butter and a small dash of cinnamon.... whaz!

I couldn't fit it all in my jar ;)
Lunch:
I simple couldn't go past my home baked spelt/rye bread sitting on the counter staring at me, so I made a sandwich:
Spread with hommus, topped with a grilled lentil burger, salsa, spinach, grated carrot, tomato slices, capsicum and avocado, topped off with another hommus-y piece of bread :)
People often ask me if I have a big appetite. My reply is always no.
I have a huge appetite :)
Snack:
A nectarine with some soy milk
My camera appeared to be more interested in my soy milk and straw than the fruit!
Dinner:
I made a delicious roast veggie, mixed bean and nut salad :)
It had roasted heirloom carrots, sweet potato, potato, pumpkin, swede, beetroot and in the last 15 mins some vine ripened tomatoes. Simply drizzled in olive oil and baked at 180 degrees celsius for 45 mins.
Then mixed with some massaged kale (I simply rubbed the kale so it was softer) some drained and rinsed chickpeas and red kidney beans (they were sitting in my fridge doing nothing) and some chopped mixed raw nuts:
 Yum!
