Yesterday I promised you guys a recipe and I never break my promises!
My very first post on this blog featured this!
It was pretty good. I didn't write a recipe. Not a good start to food blogging hey? ;)
Well this one is slightly better, it has a recipe- in picture form!
To begin:
Steam this much sweet potato until soft(don't worry about measurements- I rarely do! It'll still work :)
Whaz up about 1 cup of butter beans, some nutritional yeast (1 tablespoon) and hommus (as much as you like!) in a food processor:
Add your sweet potato:
Whazzz!
Place in a bowl with oats (1/4-1/3 cup) and other add-ins (I used peas, corn, and seeds)
Stir to combine...
Form into two patties and place in fridge.
Meanwhile on a griddle pan on high heat grill a large mushroom, 1 cm thick slice of eggplant and 2 squares of eggplant until charred. Oil the griddle pan and fry your patties until brown on each side (you can just use a normal fry pan)
Layer!
Kale+ patty:
+ mushroom
+ capsicum
+ veggie burger
+ eggplant + capsicum
TA-DAAAA!
If you want an even yummier experience (yes, it IS possible!) Smear on some dijon mustard for dipping and smearing purposes!
Fork shot! (You can't use a spoon for this!)
Just like in my very first post...
This story ended in the same way:
Have a super-duper weekend everyone!

WIAW #4
Hello, hello! Yes it's that time again... well not really- it's Thursday after all!- but it was that time yesterday for a WIAW! ( What I ate Wednesday) Check out Peas and Crayons for the details!
My excuse for the lateness is the fact that school went back Wednesday. And dance. So I didn't get home until 8:00pm :)
Also instead of just Wednesday eats (they were a bit weird and rushed (thank you school!) I thought I'd share What I ate for the end of the holidays :D
Coconut muesli (coconut butter heated up with some milk (oat) and mixed with muesli) topped with banana and peanut butter cheerios (peanut butter heated slightly and rubbed onto wholegrain cheerios)
Chocolate coconut muesli (oats, raw cacoa, thinly sliced banana, coconut butter and oat milk) topped with rest of banana and a sprinkle of cocoa nibs... YUM!
Lunch #2
Grilled veggie burger with tomato, spinach and grilled eggplant and salsa in a grainy bun spread with hommus and then pressed in a sandwich press, with a side of kale, tomato and roasted potatoes. DELICIOUS!
Wait- there was some mashed avocado in there too!
Lunch #3 (this one I brought to school Wednesday)
A toasted wheat free sandwich, with hommus, spinach, steamed sweet potato and pumpkin, tomato and sauteed mushrooms.
2 kiwi fruit with some rock melon and soy milk.
Herbed roast veggies with spinach, lentils, roast brussel sprouts and a drizzle of tahini.
So there you have it! Some yummy eats from the past week! Oh, there was also this one:
... But you'll have to wait til' next time if you want the visual step-by-step recipe!

April wrap-up
So, it's nearly the end of the month and it's type for a recap of the month that was....
I started April off with my very... 2nd WIAW! Which was quickly followed up with an AWESOME idea, I had never thought of!
Boy, was that good- might be seeing that again for May!
Plenty of my smoothie jars featured this month:

Plenty of my smoothie jars featured this month:
Another Green monster topped with a variety of flavoured granola ( Coconut, peanut butter and chocolate!)
There was plenty of Savoury inspiration, I promise you!
There were a few old favourites:
Plenty of Spoon shots:
And quite frankly a few realistic U.G.L.Y shots of what my food really looks like when I start eating it!
Farewell April! Bring on May!
It wouldn't seem right to end it there, lets end with a typical Steph moment: (that happened way more than once! WAY more)
Spillage in the village (gotta watch out with those spoon shots!)
