I love lunch! Not as much as I love brekky... but I do love lunch (dinner not so much, because I like variety and I sort of run out of something new to make a meal with by the end of the day.
On weekends and holidays my lunches are super-yummy and filling- however packing a lunch and making it super yummy and filling is a whole other story.
I've packed my own lunch for quite a while now... so I have a pretty good repertoire of things to make that not only last, but put a smile on my face as I eat it (yep, my friends think I'm weird)
So I thought I might show you last weeks lunches for inspiration/ stimulation/ salivation :D
Monday:
Monday was gooood! Home-made wholemeal spelt bread, spread with hommus, topped with spinach, mashed pumpkin, sauteed mushrooms, a lentil burger, tomato slices and grilled yellow capsicum:
A beautiful tower of sandwich:
Grilled in a sandwich press: (I do this because I find the bread gets less soggy and it stays together better, not to mention tasting so darn good)
And cut in half and admired:
Tuesday:
This may have been my favourite lunch of the week! It was cooked brown rice, steamed pumpkin and mixed four beans, all mixed together with some home made pesto!
Soooo yummy. It kept really well too :)
Another delicious boxed lunch was this toasted veggie and hommus lunch:
Roasted pumpkin, purple baby carrots, swede, parsnip, beetroot and potato, topped with spinach and hommus.
I roasted the veggies in the morning (because I get up freakishly e3arly- but you can definitely pre-roast them the night before)
Lastly, Thursday's lunch was black quinoa, steamed pumpkin, and roasted eggplant +zucchini+capsicum+mushrooms- drizzled with olive oil and crushed garlic and roasted for around 20-30 mins at 180 degrees celsius:
That was last weeks lunches and I fell like they were all a success!
I must admit, I don't mind the jealous stares I get when opening my lid/ unwrapping my sandwich. My enjoyment of this is simply the fact that they should bring more then- an apple is not enough for lunch! (as shown in images above:) And if my lunch prompts them to do so: win/win!

Weekend happenings
I'm in a weird mood this morning guys. Don't know what kind of mood.. just weird. Sort of unmotivated, sort of wishy washy. Catch my drift?
It's been a pretty good and productive weekend however filled with yummy eats!
Just like this nacho bowl I had for lunch yesterday:
Very similar to this recipe, without the mashed veggies. It definitely put a smile on my face and fueled me up for a long day of shopping.
See I had to find a batman costume for a superhero party next week and I've got to say that though I tried, the 5-year-old boy costumes just didn't budge over my head :) I'm not complaining though, my costume was relatively easier than my friend's who was going as Robin ;)
After lots of walking and worrying, we managed to put together our costumes :)
Once home, dinner was on my mind and it was a good one:
Super simple baked sweet potato with coconut butter and a side of baby kale, chopped tomato, peas and a torn up veggie burger.

Fun Food Facts Friday!
First of all, thanks for all the wonderful comments on this post- and to everyone who asked, yes I will come and cook for you all- more cooking for me :D
Anyway, since it's Friday I thought I might do a fun little post about amazingly awesome food facts I've come across.
But first- my breakfast. Why? Because it was flipping brilliant :)
Berry ice cream topped with peanut chocolate granola:
I made the ice cream with 1 chopped frozen banana, a handful of frozen berries and 2 big scoops of greek yoghurt (optional for vegans) and whazzed in a food processor until soft serve-y (had to scrape down the sides a few times)
The granola was just some muesli, cacao nibs, wholegrain cheerios, buckwheat flakes and chia seeds mixed in a bowl; 1/2 cup of milk+ 1 spoon of raw cacao heated in microwave and stirred until combined; then rubbed into muesli along with some peanut butter (around 1 tablespoon)
Then placed in oven, spread out on a tray lined with baking paper, at 180 degrees celsius for 15 mins:
The granola was really bitter on its own and I was worried after tasting it, then I put it with the ice cream... let the pictures do the talking:
Yeh... it was pretty good :)

Food- kinda neccessary
I thought for this Thinking Out Loud I would talk about one of the most talked about topics ever. It's a topic with a mixture of emotions. Absolute love, absolute hate, enjoyment, guilt.. etc. etc. It's food, by the way:)
You know I eat food. You know I love food. You know I have passion for good, wholesome food. But for once, this isn't really about me.. it's about those who hate food, and yes they exist.
Not hating the taste of food (I mean, come on!) but the idea of eating certain foods or eating in general.
Now, I'm a teenage girl who goes to high school. Let's just say that I've come across the craziest, extreme diet ideas and ambitions there are, which just results in frustration (partly from me too, because I pretty much study healthy living as a hobby and I know the damage of these actions)
Just the other day, a friend of mine told me she was eating healthy now. One of her friends butted in with 'Eating healthy requires you to eat more than celery.' I let this comment pass and instead wanted to share the fun fact about celery being negative calories:
In response she just smiled and said; 'I know.'
There were so many things I wanted to say to her- and every other girl for that matter. I want to tell these girls that food is necessary, especially at our age! We need quite a bit to fuel our daily lives. I want to tell them that the reason they're feeling fatigued, stressed an fuzzy is because of their diet. I want to tell them...
Well really I want to show them the foods I eat- because I'm not ashamed to admit it- I like my food and have a very healthy appetite!
Exhibit A:
My big nacho stacks (full of veggies, fibre and protein)
Exhibit B:
My ultimate veggie sandwiches( filled with mashed avocado, grated carrot and beetroot, spinach, mashed four beans and salsa, sprouts and tomato on home made spelt bread)
Exhibit C:
My ultimate stuffing skills (If it's going to be stuffed, I'll make sure it's stuffed!)
A hot dog (vegan sausages) on a wholemeal spelt roll with a side of healthy baked fries and steamed pumpkin and swede.
A wrap filled with mashed veggies, (sweet potato, pumpkin, parsnip and beetroot) tofu, steamed brussels sprouts, hommus, lentils, wrapped up and grilled in a sandwich press.
A squished and crammed pita pocket with sauteed veggies (tomato, eggplant, mushrooms, capsicum), salsa, avocado and a torn up veggie patty.
Exhitbit D:
A big ol' snack plate:
Organic veggie tortilla chips, quorn mince with taco seasoning, tomatoes and mushrooms, steamed greens and some spelt bread with hommus.
Popcorn, (I simply place raw kernels in a saucepan and heat until all popped (no butter and salt, because I don't think it needs it) sweet potato, guacamole, brown rice and lentils and peas.
If these girls saw the amount of food I eat, they would probably faint. But here's the thing. What I eat is all whole foods. A rare amount is processed. It's full of fibre, plant protein, and veggies along with those things comes essential vitamins and minerals.
My friends look at me and say 'How can you be so skinny and eat so much?' sure that hurts a little bit, but I take it in my stride and say exactly what I said above- they're my friends after all, they'll still love me :)
They look at girls around us and see them eating chips and chocolate and pizzas from the school canteen who are stick thin and sigh into their wholegrain sandwiches or salads.
I feel like screaming to them that those girls who eat terrible and can still maintain a thin body aren't healthy... but of course at this age, that doesn't seem to matter.
It's a tough life being a teenage girl!

WIAW #21
Happy Wednesday! I feel like I say this every week, but time flies, doesn't it? I'm not complaining (almost holidays for us Aussies) and I'm also not complaining about the delicious eats I've had!

Breakfast:
After a mug of warm lemon water and a quick purely twins workout my stomach was ready for brekky, where I also made my lunch for school at the same time (I do like productive mornings!)
I had yet another almost empty jar of nut butter lying around (this time it was cashew butter) and decided I would fill it with hot steel cut oats this time.
It was simple and delicious- 1/3 cup steel cut oats + 1 sliced banana + 1 1/2 cups of almond milk + a BIG dash of cinnamon and a dash of chia seeds- heated to boiling and then simmered for around 15 mins, where I left it to sit for another 10-15 to cool (half way through its cooling time I transferred it to the jar so the nut butter would melt :)
Meanwhile I made some frozen blueberry yoghurt:
It was just a handful of frozen blueberries and about 4 big spoons of greek yoghurt whazzed together:
This was a gooood brekky :)
Love me some creamy desserts first thing in the morn'
Especially love me some oats in a jar!
For lunchkins I made a big salad sandwich on home-made spelt bread:
Topped with mashed lentils and hommus on one side, beetroot dip on the other (love the colour!) and spinach, baby cucumbers, sliced tomato, capsicum strips and grated carrot= very filling!
Snack: Included a super ymmuy peach, some grapes and a glass of soy milk :)
Dinner:
Dinner was delicious yet again (Good food day for me!) with a big bowl of rice, steamed veggies (sweet potato, pumpkin, swede, parsnip and potato, plus brussels sprouts and broccoli) mixed with kale pesto with a side of runny poached eggs:)
