Glazed Cinnamon Roll Oats

Happy Sunday everyone!!

Who braved the Boxing Day sales yesterday? I must admit, after trying- and quite epic-ly failing- to manoeuver my way through the ridiculous crowds through the central areas and then the extremely smaller, one person wide walkway shops, I was more than ready to come home and just be all by myself for a little while!
 
 Any who, I'm all better now and back to my old self.. which means one thing:
 Back to loving on ALL the food!!

On this brilliant Sunday I thought I would share with you today's stellar breakfast, also referred to as a glazed cinnamon roll in oat form!
 This breakfast (/ lunch/ dinner/ snack of any time of the day because it tastes so gosh darn good!) is ridiculously simple and requires only a handful of good-for-your-body ingredients to have you singing and dancing throughout your entire day :)
 To make a bowl of your very own all you'll need is:

Ingredients:
3/4 cup rolled oats
1 banana, thinly sliced
1/2 teaspoon ground cinnamon (plus extra to dust on top)
1 scoop vanilla protein powder
1 cup almond milk
1/2 cup water
Optional- sprinkle chia seeds
Any topping you would like- to make the traditional cinnamon glazed roll, I would recommend using coconut butter

 Then, all you need to do is:

Method:
1. Place all the ingredients in a saucepan and stir to combine
2. Place the saucepan over medium heat, bring to the boil, stirring occasionally and continue to stir every now and then until all the liquid is absorbed and the oats are thick and fluffy :)
3. Place a little coconut butter in the bottom of your bowl, pour half the oats on top, a little more coconut butter, the rest of the oats and coconut butter to top!
4. Dust with a little extra cinnamon and enjoy!
 Sweet, creamy, cinnamon-y, delicious!! Filled with the filling fiber and wholegrain goodness of rolled oats, the healing benefits of cinnamon, all of banana's goodness and coconut butter- I mean come on!
A glazed cinnamon roll in a bowl. Healthy too. And ridiculously yummy. You know you have to give this one a try!

After the Christmas Indulgence Recipe!

Hello, hello friendly friends!!
How was your christmas?! Was it fabulous, filled with fabulous friends, family, loved ones and... food??
Mine sure was!

Like all those weightloss magazines and websites, I'm here today with a recipe to make after indulging in all of your favourite foods at christmas... although my reasons are a little different. See, if you're anything like me, you may have a little bit of a sensitive stomach to certain foods and don't feel 10/10 after consuming such foods.
I was in charge of baking a delicious dessert for Christmas so I whipped up a lemon meringue pie :)

My list includes wheat, lots of dairy and a stack of sugar.

My Christmas lunch included quite a bit of bread, cheese and some sweet stuff. So you can imagine that when dinner time rolled around, I wasn't all that keen to indulge again. Instead I went with something a little easier on the tummy.

Unlike those weightless articles about cutting calories around Christmas and eating nothing but lettuce for all your other meals surrounding either Chrissy brekky, or lunch, or dinner, my recipe is filling, nutritious and delicious, it's just a little easier on the stomach for digestion! Because you know that I was still starving when dinner time rolls round (no matter what day it is).

This is my Everything-but-the-kitchen-sink Moroccan Spiced Veggie Quinoa Soup!

Ingredients:
1/3 cup quinoa
1/3 cup dried lentils/ other dried beans as well (I think I had some cannellini beans in there as well?)
1/2 cup chopped cauliflower
1/2 cup chopped eggplant
handful sweet corn
strip of red capsicum, chopped
strip green capsicum chopped
1/4 red chilli, finely diced
1/4 tinned no-added-salt tomatoes
a few big dashes of harrisa powder
1 teaspoon nutritional yeast
1/2 teaspoon dried, mixed herbs
2 cups water (more if needed)

Method:
1. Place all the chopped veggies, dried quinoa, lentils and beans and herbs and spices into a medium saucepan and add the water. Stir.
2. Place over medium heat, bring to the boil and then lower heat to simmer for 15 minutes.
3. After 15 minutes remove lid, add extra water if needed and simmer for a further 5 minutes, stirring occasionally.
4. Leave to cool slightly and then transfer to a bowl and enjoy!!

Filling, tasty, perfect!

When breakfast the next morning rolled round, I was back to my usually dessert-for-breakfast loves:
Crunchy PB mixed with raw cacao powder...
Spread on wholemeal spelt bread, topped with banana, more chocolate-y spread bread and toasted in a sandwich press!! YUM!

Chocolate banana and PB toasted sandwich with a side of blueberry fro-yo (frozen blueberries plus 3 big scoops of greek yoghurt whizzed up until smooth!)


Happy, happy days :)
Nothing beats warm, gooey chocolate for breakfast!

WIAW #84 Random, ridiculosuly easy meals! :D

Christmas is getting lcoer and I'm getting excited!!

But before I get too excited, let's get back to basics with our favourite link-up of the week- What I Ate Wednesday! WIAW is a no judgement link-up for bloggers alike who wish to share a full days of unedited eating and drool over everyone else's delicious eats! Thanks to Peas and Crayons for creating this awesome link-up!!

Now onto the eats! (This selection of meals come from Monday)


Breakfast: 8:00am

I have a driving test coming up at the end of January so these past few mornings my gracious mother and I have been heading out in my little Micra (named Cherry) and spending a good hour mainly parking and driving around the quiet, barely awake streets.

When I get home from all this driving practice- I am famished!
A huuuge mug of cherry cheesecake oats with peanut butter and mixed nut butter in the middle:
All I did was simply pour into a saucepan some rolled oats, chia seeds, 1 thinly sliced banana, handful of frozen cherries and enough almond milk to cover (plus a little water), cook on medium heat until liquid is absorbed (stirring occasionally to prevent bottom-of-pan stickage), leave to cool slightly, then stir in a dollop of greek yoghurt.
Creamy, sweet, cherrrrriiieeeessss!
What more could a girl ask for??
Nom.

Lunch: 12:15pm
Recently I've been in a hangry phase. I'm always ridiculously hungry. So come 11:45am I was ravenous, so decided to start on lunch whilst crunching on a carrot.
Lunch was super simple and super tasty:
2 fried eggs atop some tomato slices with a side of oven-baked potato fried and a bowl of air popped popcorn:
Lots of air popped popcorn :)
Snack: 3:30pm
Ridiculously hungry once again and a bowl of delicious fruit to the rescue!!
1 cut up delightfully crunchy pear with some beautifully ripe watermelon and black grapes :)
Definitely hit the spot!

Dinner: 6:45pm
For some reason I was still starving come dinner time so I boiled up some high protein pasta, oven baked some eggplant, zucchini, cauliflower, mushrooms and capsicum, wilted some kale in the boiling pasta water and drained some four beans and lentils to add to the bowl along with a few spoons of hommus and nutritional yeast for creamy cheesey-ness factor:
Can you believe I was still hungry after that!? I had a glass of soy milk to quieten the belly and then I was done for the day!!

The Things I Love Love Love!!

Happy Monday friendly friends!!

We're getting closer and closer to Christmas and are probably well under way with many celebratory dinners/ lunches/ catchups/ parties and just having fun!

And yet it seems that almost  every website I love to follow and frequent often (healthy living/ food blogs/ fitness etc.) are all centralised around one main topic at this present time; How to keep healthy/ maintain weight/ reduce kilojoules in this holiday season.
(finally learnt how to screen shot on a desktop!)
Now I'm not going to go off on a long rant about how the festive holidays and all the delicious treats and changes to normal routine only comes around once a year and should therefore be savoured and enjoyed, not stressed over and planned around to ensure you don't gain a single gram of weight!
Nope, I'm not going to go into that because I believe you are all smart enough to know that already and are instead focusing on the things (people and/ or food ;) you love these holidays! And so I am going to do the same!! :)

First of all, I love food. Food is healing, replenishing, rejuvenating, energising, tasty and down right happiness inducing. So these holidays I'm going to enjoy my food!

I love thick, chocolate smoothies:
 That require a GREAT amount of slurping energy to drink and also a spoon if required:
 I love bread and 'cheese' that doesn't give me a stomach ache (thankyou hommus, nutritional yeast and water) and tomato and combining them to make an old childhood favourite:
 Grilled cheese and tomato :)
 The crusty bit of my home-made wholemeal spelt bread topped with some vegan cheese, tomato slices and more vegan cheese:
 Popped under the grill at 180 degrees for 5-10mins until golden brown :)
 I also love my minions plate..

 I love super huge sandwiches filled with a rainbow of veggies:
 Hommus, veggie patty, spinach, grated carrot and beetroot, tomato, capsicum and avocado:
 And no, that is not a cucumber in the background, that would be my foam roller :P I was tricked for a second there too!!
 I love chocolate... especially for breakfast:


 And I especially love warm, gooey oats with nut butter swirled throughout:

 I love, love, love roasted white sweet potato:

 As well as a big plate of ALL the roasted veg:
 And nothing can beat a cool refreshing smoothie bowl, topped with slightly warm, crunchy granola:

 And that's just the food!!
I love my friends, family, being together, watching corny holiday movies, baking, playing games, laughing, talking, soaking up the sun (Aussie Summer), the beach:
 I also forget how lucky I am to have a gorgeous white sandy beach at my backyard..
 And it truly fills me with so much joy to simply walk along the sand and just be.


Wow, that got a little lengthier than intended!
