Recipes!

As promised yesterday I have the recipe for the pictured balls- which do have a name!
Here are my Soft, Fudgy Weet-bix Truffles:
Ingredients:
2 weet-bix, crushed
1 smashed banana
1 tablespoon peanut butter
2 tablespoons rolled oats
Oat milk
Optional- coconut butter for top :)
(and that's it!)

Method:
1. Preheat oven to 180 degrees celsius, line a baking tray with baking paper
2. Place banana and peanut butter in a microwave safe bowl and microwave for 30 seconds, stir to combine
3. Combine weet-bix, banana peanut butter and a small amount of oat milk until you can form into balls.
4. Roll into balls and place on baking tray:
5. Bake for 10-15 mins until slightly golden, place on wire rack to cool:
Drizzle over whatever you like- as you can see, I went with coconut butter, :D are you really surprised?
Make yourself a little parfait type thing with whatever fruit or muesli or yogurt you have lying around:
I just had grapes and some oat milk :)

WIAW- first try!

Now, I'm not usually part of the What I Ate Wednesday Club,  but on this last particular Wednesday I managed to take a picture of all of the yummy meals I enjoyed on Wednesday (my busiest day of the week!)

What I Ate Wednesday: Love Your Veggies
 Lets Get started! (p.s I cooked all of these meals either the night before Wednesday, or Wednesday morning- impressive hey?)
Tuesday nights dinner was PIZZA!!!
Using my pumpkin pizza base and topped with 100% tomato paste mixed with Italian herbs, mushrooms, tomatoes, sweet potato, parsnip, swede, rocket, basil and vegan cheese, baked in the oven for 15-20 mins (the root veggies were already steamed)
 While making the pizza base, I made a bit extra for lunch on Wednesday and filled it with salsa, mixed four beans, rocket, basil and vegan cheese... then I did a Typical Steph:
Hehe, I rolled it up and baked it :)
On Wednesday, I woke up and wanted to use my jar again (I have an obsession!)
So I went with a layered parfait. I like parfaits! (see this post and this one )
I simply combined my cereals, added milk to cover and microwaved until most of the milk was absorbed, then I split it into three separate bowls, added a teaspoon of coconut butter to one, a teaspoon of peanut butter to another and a teaspoon of coconut butter mixed with cocoa powder to the last one and mixed.
I then layered up with banana, coconut muesli, grapes, banana, chocolate muesli, grapes, banana, peanut muesli, banana and a dash of oat milk- delicious!

While I was eating this delightful brekky, my dinner was in the oven cooking:
2 little chickpea crust quiches. I'm sorry I didn't write the recipe down :) But there were eggs, oat milk, brown rice and stacks of veggies as well as garlic and nutritional yeast in those little pots.
So brekky-parfait, lunch- pizza parcel, dinner- mini quiches! back to brekky:

Happy Monday

Happy Monday everyone! I realise not many people probably like Mondays, but I think they're ok, maybe because I'm still buzzing from the weekend and all my wonderful food experiences!

So, because it's the weekend I take advantage of all the extra time I have! No, I don't sit around and relax!?! I cook! My lunches are sooo much better than the packed salads I usually box up for school. They look a little something like this:
Pizza and chips...
That is- herby polenta-based pizza topped with salsa, capsicum, tomatoes, mushrooms, rocket, basil, veggie patty and vegan cheese, with a side of sweet potato chips (sliced and baked in oven- 20 mins)
I made the polenta and added in some oregano, basil and nutritional yeast, then I spread it out to make a circle on a plate with baking paper and put it in the freezer. I also chargrilled my veggies and cooked a veggie patty then lightly chargrilled my polenta base and spread salsa, then 'cheese' then veggies + veggie patty and rocket and basil and some more 'cheese'- baked in oven (10 mins)
Another fabulicious meal I enjoyed, was my version of a burger and chips again:( Wow, I was really in a junk food mood!)
So I steamed some mixed root veggies and mashed them and also made and cooked up a veggie patty:
Not as pretty as this one though.
So it went bread (my rainbow mash) lettuce (spinach and rocket)beef burger (home-made veggie patty) cheese (vegan cheese) sauce (salsa- less sugar and salt) sliced tomato and bread (rainbow mash)
So yeh, I pretty much changed everything about the typical burger :)
Oh, and my fried chips (oven-baked baby potatoes)
It was also my mum's birthday on the weekend, so I spent all of Sunday baking her birthday cake ( It had six layers)
Be impressed:
It's just a butter cake, but it took a while! Topped with some white fondant roses :)

I'll have a slice of that! (not really, I'm the only one who knows how much butter went into that cake!)
Any-who, we went out to the beach shack for dinner (not many options for me, but oh well!) and I absolutely fell in love with their use of jars for cups, which brings me to this mornings breakfast...
My super-duper morning smoothie- frozen banana, mango, rolled oats, chia seeds, LSA mix, avocado, peanut butter and oat milk= delicious and it was a big jar! My smoothies are big :)

With some yummy green grapes on top! It was still almost ice-cream thick, which is how I like it!

Strawberries, bananas and ... peanut butter?

Everyone knows the strawberry banana combo, but I'm here to tell you that adding peanut butter, takes it to a whole new level.
All of you have probably also realized that I am obsessed with peanut butter, so this may be a little bias towards me- I'm definitely not as obsessed as this guy though!

Anywho, I was in the mood for my favourite sandwich (see variations here and here) but decided I needed to jazz it up a little- not this much though!

With a coconut fruit salad on the side (banana, blueberries and strawberries rubbed in with coconut butter)
So, I got my home-made, wheat free rye bread and spread on some peanut butter and banana, strawberries and blueberries and toasted it all in a sandwich press, until warm and gooey.
It was really delicious and reminded me of the french flag (red, white and blue :)
My other strawberry, banana, peanut butter creation occurred this morning, when I was in the mood for a big mug of oats.
I made some strawberry oatmeal (rolled oats, oat bran, very thinly sliced banana and strawberry chunks and oat milk, left to thicken on low and then turned up and stirred vigorously to create whipped banana oatmeal):
 Then, I got my mug and made it oatmeal worthy:

You always have to hide a little bit of nut butter under your oats, so it melts and your end spoonfuls are just as good as your first!
Then I poured in my oatmeal, sprinkled with muesli and multi-grain cheerios and remaining sliced banana and strawberries- delicious!
Wait, something's missing!?!
 There we go!

Just because I like pretty pictures, doesn't mean I don't have to be realistic with you guys, when I actually started eating, it looked like this:

YUM! X 2

Do you remember my first YUM! post? Well this one might just be even better!
My favourite food to get when I was with friends at the shops was a glazed cinnamon donut :) It was yummy! Now, being sugar free, dairy free and mostly wheat free, I don't think I would enjoy those donuts as much anymore :( But have no fear! Creativity is here!
Presenting.... Drum roll please.....
Glazed Pumpkin Cinnamon Scrolls!
( sugar, dairy, wheat, soy free and vegan! Did I mention out-of-this-world delicious!?!)
And that was my breakfast. ;)
Ingredients:
Pumpkin scrolls:
130g pumpkin, chopped
chia gel- 1 tablespoon chia seeds mixed with 1 1/2 tablespoons milk of choice
45g wholemeal spelt flour
 10g coconut flour
10g rolled oats (chew factor)
10g oat bran (non-chew factor:)
optional- LSA mix
1- 2 teaspoons milk of choice ( I used oat milk) plus extra to brush on
Filling:
1 banana, sliced
any leftover pumpkin
5-6 walnuts, broken into pieces
1/2-1 teaspoons of ground cinnamon
2 tablespoons milk ( I used oat)
optional- coconut butter to glaze :)

Method:
1. Preheat oven to 180 degrees celsius, line a baking tray with baking paper.
2. Steam pumpkin until soft ( 20 mins) and create chia gel
3.Mash pumpkin until lump free:
set aside to cool
4. To create the pumpkin scroll place all the dry ingredients in a medium bowl, stir to combine.
5. Add in the pumpkin and stir to form crumbs, add in chia gel and enough milk to form a soft dough (you may not need all the pumpkin, I had about 1 tablespoon leftover)
Place in fridge while you make the filling.
6. To make filling, place all the ingredients in a saucepan
7. Place on medium heat and stir until thickens and banana has melted:
It looks just like caramel- minus the sugar :)
8. Take dough out of fridge, roll out on a lightly floured piece of baking paper until about1/2 a centimeter thick.
9. Spread on filling, you may have some leftover - is this really a problem?
10. Roll up, cut in half and brush on some milk, place on baking tray:
10. Bake in the oven for 10-15 mins until lightly golden brown and crisp on the outside- oh and the whole house smells amazing too! Place on wire rack to cool slightly- not too much!
11. Glaze with whatever you would like- icing, butter, nut butter, chocolate spread or if you want the best experience ever, be like me and drizzle generously with some coconut butter!
12. Be mind blown, about how amazing this tastes sans butter, sugar, eggs, or anything!
13. Oh- and ENJOY!

 This was definitely better than those over sugary, ridiculously sweet donuts I used to be so obsessed with!
