BLUE!!! ... berries

Blueberries, blueberries, I LOVE BLUEBERRIES! I also bought some the other day, which was good :)
I'll start with the breakfast I enjoyed that actually comes with a recipe!
Presenting, the most delicious blueberry recipe so far on this blog...
Glazed Lemon Blueberry Doughnuts!
Now, I have a few good doughnut recipes already on this blog ( see here and here) but I think these ones give em' a run for their money ( actually I like them all, maybe I have to do a doughnut trio?)
P.S. If you don't have a doughnut machine, just make these into delicious pancakes!
Ingredients:
25g wholemeal spelt flour
5g oatbran
10g rolled oats
5g coconut flour (mainly for taste- just increase spelt flour if you don't have it)
1 teaspoon baking powder
1/2 teaspoon grated lemon rind
handful of blueberries
1/4 cup milk of choice ( I used oat milk) mixed with 1 teaspoon lemon juice
chia gel- 1 tablespoon chia seeds mixed with 1 tablespoon milk ( I used oat) let sit for 5 mins

Method:
1. Preheat doughnut machine ( Or just use a fry pan- how you would normally make pancakes)
2.Combine dry ingredients in a medium bowl
3. Whisk in chia gel, milk and lemon rind
4.Brush on some oil to machine (or fry pan)  Stir in blueberries
5. Spoon into machine and close lid for a couple of minutes ( check after 2mins- ready when golden and firm)
6. Place onto wire rack to cool slightly- glaze with whatever you like ( I glazed with coconut butter- yum coconut butter!)

As you can see, I enjoyed my delicious doughnuts with some grapes and also a strawberry-grape milkshake: ( Made by blending- strawberries, grapes, soy milk and ice in a blender until smooth)

Blueberry oatmeal:
This is really simple, you just make a batch of oats ( or a batch of my oats) with a big handful of blueberries thrown in and cook until colour starts to run and it becomes this awesome purply blob of yumminess!- Yeh!

Don't forget to top it with something you love ( for me that was blueberries and coconut butter)

A day in the life of my tummy!


'Yay, finally something other than breakfasts!' I hear the crowd joyfully shout! Haha, have no fear, another breakfast recipe is lined up for your viewing tomorrow.. or the next day... or whenever I get round to it- but have no fear, it's coming!

Any-who I thought it would be nice if you had a taster of the life of my tummy! :)
We started with a green smoothie jar:
 Made with:
1 frozen banana
1/2 avocado
2 tablespoons rolled oats
1 tablespoon LSA mix
1 tablespoon chia seeds
2 BIG handfuls of spinach :D
some ice
1 tablespoon peanut butter
and a splash of  milk ( I used oat) - not too much, I like it thick!

Whaz up in blender... done!
The second reason I wanted it thick, was so I could top it with this:
Overnight oats (muesli soaked in milk (oat for me) over night, then I stirred in some delicious grapes and blueberries.. see:
Doesn't it look pretty- not for long.. mwahahaha!

Yum Yum!
Then the tummy was rewarded with lunch- even after that amazing brekky!
 A slice of multi-grain sourdough
Topped with hommus, steamed carrots and sweet potato, sauteed capsicum, tomato and mushrooms, spinach, bean balls and vegan cheese:

After, my delicious brekky and my scrumptious lunch, I still rewarded my tum tum with an exquisite dinner ( yes I used a thesaurus, I ran out of describing words :)
 Cooked quinoa with roasted baby potatoes, pumpkin, parsnip, beetroot and tomatoes with spinach, baby cucumber, toasted seeds and pine nuts, cranberries and grilled corn= yum
So I think my tummy was pretty lucky yesterday and you should spoil yours too with a rainbow assortment of veggies and delicious whole grains and healthy fats- I'm sure your tummy will spoil you back!

Pancake Sunday!


Just like with WIAW, pancake Sunday is also another big blogging tradition. I'm fine with that!
So, I went about making some pancakes, in the mood for chocolate and berries- you can't beat that combo- it's good in waffles too! But I needed different flavours and textures, (really I needed ice-cream) so there are a few little surprises thrown in to make things interesting...

Chocolate pancakes with berry ice-cream:
Ingredients:
10g wholemeal spelt flour
10g coconut flour
10g rolled oats
15g oat bran
3g raw cocoa (about 1/2 tablespoon- it's strong, you don't need much!)
Chia gel- 1 tablespoon chia seeds mixed with 1 tablespoon oat milk, sit for 5 mins
Milk to reach desired consistency (about 3/4 cup- keep adding if too thick) I used oat-milk
Optional- wholegrain cheerios... you'll see
Ice-cream:
1 frozen banana
2 handfuls of mixed berries
Method:
1. Combine dry ingredients in a bowl. Whisk in chia gel and slowly keep adding milk until pancake consistency: (like pouring cream)
2. Heat frypan over low/medium heat and grease well( you can use butter- I used olive oil)
3. Spoon dollops of batter onto pan (you should get about 4 medium sized pancakes)
4. Cook for a few minutes until bubbles start to appear... place cheerios on top :)
5. Flip carefully (without eggs they become a bit more fragile) and cook for a few minutes until golden brown on both sides.

6.Turn off heat and place pancakes on paper towel, cover with paper towel to retain heat
7. Make ice-cream: Place frozen banana and berries in food processor and process until you get sorbet consistency (you may have to scrape the sides a few times)
8. Place pancakes on plate and top with whatever you like- as you can see, I went with peanut butter, yum :)
I just think the cheerios look so gosh darn cute!
The ice-cream went perfectly with them, at the end I also stirred in some muesli, but it's just as good without it.

Brekky!

I have noticed (as most of you probably have too) that I have a lot of breakfast recipes! More than anything else on this blog. It's not because I'm meal-ist or anything, it's just that... I LOVE BREAKFAST! And so should you!
Now, I'm a high school student, so every second girl you turn to, reveals she doesn't eat brekky. Ever! I can never relate to this, partly because I have low blood sugar and it's really dangerous for me to skip breakfast, but also it's dangerous not to feed this ravenous morning beast- she's hungry people! Been fasting all night!
So, that is my explanation for the vast number of breakfast recipes that appear on this blog. Is it really a bad thing, when you can make things like this any day of the week?
Vegan pretzels:

Breakfast Pizzerts:
Fudgy stuffed cookies:

 Chocolate/berry waffles:
Glazed pumpkin doughnuts:
And.. oatmeal bowls to fill with love:
All of these recipes are vegan, dairy free, gluten free, sugar free, wheat free, full of good fats, nutrients, whole grains, fiber, at least 1 serving of fruits/veggies (usually many more) and are totally guilt free- but you'd never guess it because they taste so delicious! So I guess that's my third reason for eating breakfast, I can wake up and make any of those for my first (and most important) meal of the day!
Speaking of oatmeal bowls and breakfast pizzas, I decided to combine them...
Oatmeal pizza!

Ingredients:
1/2 small green apple
1 banana
45g rolled oats
10g oat bran
small handul of chopped walnuts
approx- 1 cup milk ( I used oat milk)
optional- chia seeds, LSA mix
Any toppings you like- I used peanut butter as sauce and the rest of my banana and some green grapes

Method:
1. Preheat oven to 180 degrees celsius, line a baking tray with baking paper
2. chop apple:

3. Cut banana in half:
4.Put dry ingredients in saucepan:
5. Place milk in saucepan, add thinly sliced 1/2 banana and stir to combine, place on medium heat and leave to thicken for 2 mins.
6. Once thickening and bubbling, stir vigorously until quite thick and sticky, spread onto baking paper:
7. Bake in oven for 10 mins
8. Take out, place toppings on, back into oven for a few mins ( I baked mine until the banana was gooey- 5mins) Pre-baked:
9. Enjoy!

My advice:
Not only should you eat breakfast- you should enjoy it, go to bed excited about the next day, because you're going to have something out-of-this-world delicious!
