WIAW #5

Hello, hello! Thanks for joining me on another WIAW hosted by Peas and Crayons!
Now, my What I ate Wednesdays are just generally what I've been eating... Wednesdays are pretty boring usually, so yeh. You can also check out what everyone else has been enjoying over at peas and crayons with the wonderful link up! If all this talk of food and eating etc. just makes you hungry, than tune in next time for a recipe!

Breakfasts:

Eww, what is that! Trust me.. it was sooo yummy! It was a rich, nutty, chocolatey, green smoothie. O.M.G It was goood:
1 frozen banana+ 1/2 frozen avocado+ 1 tablespoon oats+ 1 tablespoon nut butter+ 1-2 tablespoons raw cacoa+ 1 tablespoon choc protein powder+ dash of cinnamon+ some chia seeds+ milk- I used oat (not much- I like THICK shakes- like barely able to sip through straw thick!)+ 2 big handfuls of spinach.
Place in blender and blend!
Cinnamon apple microwave muffin, topped with coconut wholegrain cheerios and peanut butter ice cream (frozen banana+ peanut butter+whaz!)
A jar of peanut butter! Hahah just kidding- it was almost entirely empty...

And lets not forget an old favourite:

 Peanut butter banana toastie!

Lunches:

Egg and salad roll (boiled egg mashed with hommus with capsicum, grated carrot, cucumber, tomato and spinach)
Panini! With veggie burger, tomato, grilled capsicum, mushroom and eggplant. Also some hommus and salsa:
Grilled in a sandwich press:
Taken off to school :)

Snacks:

I only have a picture of today's snack, but their all fairly similar, usually fruit and soy milk* :)
 *I'm also so rebel- I have my milk in a coke glass:

Dinners:

A Mexican wrap, with Mexican flavoured not-mince, salsa, beans, corn, lentils and avocado- pressed in a sandwich press and some roast veggies:
Then I wasn't feeling too well, so I had a nice simple dinner of grilled polenta flatbread, baked beans and roast veggies:
So there you have it! A glimpse into my stomach (Umm, yeh, I meant to say that!)

Steph's insightful insights!

I think about things. A lot. Some genius. Some... not so much. But I thought today, I would share with you some of the tips, tricks, values, knowledge and wisdom I have picked up over the past 15-and-a-bit years I have been on this Earth. Bored already? Skip to the bottom- there's a recipe ;)

Number 1. I BELIEVE A BALANCED DIET IS A COOKIE IN EACH HAND!
Number 2. SOMEONE NEEDS TO TELL ME: WHAT WAS THE GREATEST THING BEFORE SLICED BREAD?
Number 3. IF SWIMMING IS SO GOOD FOR YOUR FIGURE, HOW DO YOU EXPLAIN WHALES?
Number 4. Lastly I want to leave you with my favourite piece of advice..
BE YOURSELF.
UNLESS YOU'RE A UNICORN.

Well, there you have it! A teeny peek at my brains-a-thinking!
Now for those of you who came for the recipe.
Who likes cookies!
Don't be silly- you all do!
Especially soft, chewy, oaty, nutty cookies :)
Healthy AND yummy enough for breakfast!
Ingredients:
50g rolled oats
20g oatbran
3 brazil nuts, roughly chopped (or any nuts of your choice)
1 large dried fig, chopped (or sub in any dried fruits- figs are just sooooo good!)
1/4 cup milk of choice (I used oat milk)
1-2 tablespoons nut butter (I used about 1.5 tablespoons of peanut butter)
Optional- coconut butter for topping

Method:
1. Preheat oven to 180 degrees celsius. Line a tray with baking paper
2. Combine dry ingredients in a bowl:
3. Heat nut butter in the microwave for 30 seconds until runny, add to dry mix along with milk and stir (I used my hands :)
4. Form into two balls, flatten slightly and bake for around 10 mins, until hard on top (they will still be fudgy in the middle :)
5. Remove from oven place on wire rack to cool slightly- top with coconut butter-or anything you like!
I also made a green smoothie to go with it (you know tea smoothie and cookies!)
That was just 1 chopped, frozen banana with 2 handfuls of frozen mango and two BIG handfuls of spinach with a sprinkle of chia seeds and some milk (depending on thickness- I probably used 1/2 a cup) chucked in a blender and blended until smooth and creamy:

Cookie dunked in smoothie (Mmmmm, green tea!)
And to end this some-what random rambling from me, I will leave you with something that makes me soo happy:
Cheese on toast!
But really- hommus + nutritional yeast + water mixed together on toast and grilled in oven... YUM! Seriously people- Who really thinks I'm missing out?

What a way to start the day :)

I'm happy. Tummy's happy. Yep, you guessed it.. I've just eaten breakfast :)
It was a good breakfast:
On the left is a frozen pineapple and watermelon sorbet. It was good. The mug was better!
That was a crispy, cinnamon, pumpkin granola with a warm home made coconut milk drizzled over the top.
Why was the sorbet there? I'm not sure. I like sorbet- enough said :)
Ingredients:
Granola:
90g muesli (mine was fruity, seedy, nutty muesli with some wholegrain cheerios)
108g pumpkin puree (I steamed up a bunch of pumpkin and then mashed it and measured it at the end)
dash of cinnamon (1/2 teaspoon)
1 teaspoon nut butter
Coconut milk: (Super simple!)
1 tablespoon coconut butter
3/4 cup milk (I used oat milk)

Method:
1. Preheat oven to 180 degrees celsius. Line a small tray with baking paper
2.If you're using fresh pumpkin, chop and steam/boil until soft (20 mins) - then weigh
3. Place muesli in a bowl with cinnamon
4. Once pumpkin is done stir in nut butter until combined

5. Stir in to muesli
 6. Spread out onto baking tray
7. Bake for 15 mins
8. Place on paper towel
You could make your sorbet if you wanted now, (only if you want a brain freeze) you just put 109g frozen watermelon in a food processor with 86g frozen pineapple and whaz until smooth (scraping down sides occasionally)

9. Place coconut butter and milk in a small bowl and microwave for about 1 min, then stir to combine

10. Layer on half the granola into a bowl/ mug
 11. Add half of the milk
12. Place the remaining granola on top and the remaining milk
ENJOY!
Sooo good:

 It just warms your soul! :)

Stacked!

Yesterday I promised you guys a recipe and I never break my promises!
My very first post on this blog featured this!
It was pretty good. I didn't write a recipe. Not a good start to food blogging hey? ;)
Well this one is slightly better, it has a recipe- in picture form!
To begin:
Steam this much sweet potato until soft(don't worry about measurements- I rarely do! It'll still work :)
Whaz up about 1 cup of butter beans, some nutritional yeast (1 tablespoon) and hommus (as much as you like!) in a food processor:
Add your sweet potato:
Whazzz!
Place in a bowl with oats (1/4-1/3 cup) and other add-ins (I used peas, corn, and seeds)
Stir to combine...
Form into two patties and place in fridge.
Meanwhile on a griddle pan on high heat grill a large mushroom, 1 cm thick slice of eggplant and 2 squares of eggplant until charred. Oil the griddle pan and fry your patties until brown on each side (you can just use a normal fry pan)
Layer!
Kale+ patty:
 + mushroom
 + capsicum
 + veggie burger
 + eggplant + capsicum
TA-DAAAA!
If you want an even yummier experience (yes, it IS possible!) Smear on some dijon mustard for dipping and smearing purposes!
Fork shot! (You can't use a spoon for this!)
