Celebration- Oatmeal style!

So, you know how in yesterday's post, I was complaining about not celebrating my 100th post?
Well... for dinner I was feeling the celebration vibe and went with my one-and-only celebratory food....
PIZZA!
 The base came from this recipe and the toppings included 100% tomato paste mixed with oregano and basil, steamed veggies, (sweet potato, parsnip and beetroot) sliced mushrooms, some mixed antipasto sprinkling of nutritional yeast and PESTO!
DEEE-LISH!
 I really like my pizza bases thick and soft and oh-so-yummy and I reckon adding the pumpkin gives it more moisture, so it's less dry- even though I know a lot of people like thin and crispy bases, I just never have!
Pesto is also another must I must have on a pizza or else I don't feel right- as well as a tomato component :)
P.S. You can't simply have  just one slice of this pizza- it won't let you ;)
 Now onto the celebration cake....
Well I went with the chocolate version.
Sort of.
It was breakfast. I wanted oats. Chocolate oatmeal cake!
With a banana coconut glaze:) Yum.
Ingredients:
3/4 cup of rolled oats
1 teaspoon chia seeds
1-2 tablespoons raw cacoa
optional- sprinkle of cocoa nibs
dash of cinnamon
1/2 banana
1 1/4 cups milk of choice ( I used oat milk)

Glaze:
1 tablespoon coconut butter
Other half of banana
2 tablespoons milk of choice

Method:
1. Preheat oven to 180 degrees celsius. Place a small sheet of baking paper in a mini loaf pan
2. Place oats, chia seeds, raw cacoa, cocoa nibs and cinnamon in a medium saucepan- stir to combine:
3. Thinly slice 1/2 banana, add to oats:
4. Stir in milk
5. Place on a medium heat and leave to thicken- once it starts bubbling stir constantly until oats have absorbed liquid. Spoon into mini loaf pan:
6. Bake in oven for 20 mins or until not overly gooey in centre. Meanwhile make your glaze; Place the coconut butter and milk in a small bowl and microwave for 25-30 seconds until the coconut butter is melted- stir to combine. Place 1/2 banana (chopped in a small food processor, pour in coconut mixture and whaz until nice and smooth- then whaz some more!
7. Remove oatmeal from oven and turn out onto plate:
8. Drizzle over glaze... enjoy!
I enjoyed my celebration 'cake' with some mixed raw nuts and dried fruit :)
Warm, chocolatey, gooey- delicious (It's also vegan, sugar and wheat free by the way)
Yum, yum..

Happy 100th Birthday!!!

Not to me of course! It was actually, un-knowingly- on this previous post- where I published my 100th post! Me- being unaware- did a boring old WIAW post instead of a celebratory 100th birthday post! So here it is... sort of.
You see, I only found out that it was my 100th post this morning, then I had to rush around making a quick brekky and lunch to get to school by 7:00am for the inter school cross-country carnival, so there were no awesome foodie creations... but if I had to have a cake... what would it be?

Would it be the cake I made for my brother?
DEATH BY CHOCOLATE CAKE!
3 layered cake of rich mud cake, gooey brownie and another rich mud cake, iced in chocolate ganache, topped with white choc chips and the crispy top of the brownie and also some intense Tim Tam truffles!
Oh my...
Trust me people, it is a lost cause to try and preach my healthy messages to a teenage boy, instead I take advantage of his ridiculously fast metabolism and chocolate resistant taste buds and have a crazy time in the kitchen!

Or perhaps the cake I made for my mum?
RAINBOWS, LOLLIPOPS, UNICORNS AND ALL THINGS COLOURFUL CAKE!
6  layered butter cake with butter cream frosting and white fondant roses (super simple to make- you tube it!)
Impressive... no?
Well, probably wouldn't want either of them! Not unless I wanted to spend the next few days pretty sick :( Hmmm, no I need an awesome birthday cake for my blog!

And the Purely Twins birthday cake looks out of this world awesome!
However in my oblivious state this morning, I simply went about making some almond butter oats(1/2 a banana, 1/2 a cup of oats, 1-2 tablespoons almond butter and 1 cup of oat/ soy milk cooked on stove) with a homemade coconut granola and a strawberry milkshake (suuuper ripe strawberries +half a banana+ 1 cup oat/soy milk)
It was still a party in my mouth!

Oats too dry- have no fear! Milkshakes are here!
 You will simply have to tune in next time if you want a real recipe for a celebratory creation!

WIAW #6

Yes, yes I know- early again! :)
Welcome to another WIAW (What I ate Wednesday) featuring on Tuesday!

So as per usual, the day started off with Breakfast:
 My absolute favourite breakfast ever! Peanut butter and banana toastie with a side of strawberries and a glass of soy milk :)
But why is it on the ground?
Funny story- ever since the 40-hour-famine last year (I gave up furniture and technology) I prefer sitting on the floor to eat brekky... weird, I know :)

Lunch:
* Another note (this is a mix between today and yesterday as I didn't get to photograph a whole day- I did not eat two sandwiches in one day!)
 Grilled veggie sandwich with a chickpea patty, grilled capsicum, eggplant, mushrooms, carrot and tomato- as well as some hommus and spinach :)
Snack:
*Note... again- Does anyone else think drinks taste better through a straw?
 Chopped apple with a glass of soy milk, in a coke cup, with a curly pink straw- it doesnt get cooler than that people!
Jealous?
Dinner:
*Note- last one- this was yummy!
Baked garlic-y wedges, with some home-made guacamole and salsa and a salad of steamed veggies and chili tofu. The guac+salsa was for wedge dipping :)

Fill me up, Buttercup!

Every morning I wake up, smile at the world and then go about my business of organising stuff for school, or heading out for a walk, or....
YEAH RIGHT!
Every morning I wake up, smile at the world and.. JUMP out of bed ready for a delicious brekky as my tummy is ready for food!
I always make big brekky's, but sometimes they just don't satisfy:(
Today's breakfast definitely satisfied!
Vanilla protein oats in an almost empty coconut butter jar with a papaya and banana green smoothie!
It may not look like much, but trust me- you will be full to the brim!
I got up, ate a small handful of brazil nuts and began making my oats (oats+oat milk+ 1 scoop of vanilla protein powder- smells sooo good!+ 1 tablespoon chia seeds) Once the were done I put them in my jar, put the lid on and went for a quick run/sprint around the block (training for cross country carnival on Thursday!)
I then raced in the door, threw a frozen banana and 1/4 of a frozen papaya (both chopped) in a blender with some soy milk and two large handfuls of spinach and blended until smooth.
Then I went outside and devoured my delicious brekky!

It was a tad sweet for me (I don't eat any added/processed/ not already in natural ingredients sugars so I guess I'm more sensitive to sweet stuff -papaya and vanilla protein powder) but I'm sure anyone else would find it perfect!
Super full right now and ready to tackle the streets of Hillarys, door knocking for the Red Shield Appeal!

PB+J!


Guess what happened today? One word. Cockroach. Worst word ever invented.
OK, maybe I should explain a little.
I was putting on my jacket at school and felt something funny as I put my arm through my sleeve, I didn't think it was anything- a few minutes later something crawls out onto my hand- COCKROACH! I scream and jump (and very nearly cry) and keep screaming and jumping for a good 10 minutes until I'm certain there is nothing left lurking in my jumper.
BLEECCHH!
It was sort of a coincidence that on peanut butter fingers blog post today was a list of 8 fears and her number 8 was cockroaches!
Well that was a bad part from today, but I like to focus on the good and as usual the good was...
BREAKFAST!
That my friends is my bowl of overnight oats inspired by the classic PB+J sandwich!
So really it's peanut butter and berry over night oats with banana!
Ingredients:
3/4 cup muesli
1 tablespoon chia seeds
1 cup milk of choice (I used oat milk)
1 banana
1 tablespoon peanut butter
1 handful of mixed berries (fresh/frozen)
extra milk

Method:
1. The night before make your overnight oats by placing the muesli, chia seeds and milk in a bowl, stirring and placing in the fridge overnight.
2. The next day you will have this:
Give it a little stir:
3. Now you can make your jam by placing the berries in a small bowl:
and heating in the microwave for about 1 minute (you may need more depending on microwave)
4. Place in a small food processor along with a few chunks of banana for sweetness:
5. Whaz until smooth:
6. To make your peanut butter mixture, place peanut butter and about 1 tablespoon of milk in a small bowl and microwave for around 20 seconds, stir to combine:
7. Place in the washed food processor with some banana and whaz until smooth:
8. Cut up rest of banana, add to overnight oats (I also added some multi-grain cheerios) then lightly stir in jam and peanut butter mixtures to create a sort of swirl effect
Enjoy!
Next time I think I'll freeze it in my icy-pole molds and create PB+J oat ice creams!
