I think sometimes I get caught up in extravagant meals with heaps of ingredients and sides and random foods, that usually don't really end up going together (but are still gobbled up- come on people.. it's food!) for example, roast veggies, with a side of chili pesto pasta and some steamed greens topped with nutritional yeast.
So, occasionally I take a step back and get back to basics, I truly believe my favourite meals are the most basic kinds..
I mean- beans and toast, tomato and pesto pizza, or simply a bowl of roasted/steamed/anything veggies.
With that in mind, here's some meals and loose recipes for any inspiration :)
OATS!
I've been known to put multiple types of fruit in my oats, create oat ice creams, bowls, pizzas and more.. but my favourite is definitely simple whipped banana oats:
Ingredients:
1 banana
1/2 cup oats
1 tablespoon chia seeds
1 cup milk of choice (I used oat)
optional 1 tablespoon coconut butter
any topping you like (in the picture I used almond butter)
Method:
1. Place oats, chia seeds, thinly sliced banana, optional coconut butter and milk in a saucepan, stir to combine
2. Place on medium heat and leave to thicken- once bubbling whisk until all the banana chunks disappear and your oats are thickened to your liking
3. Top with anything and enjoy!
SO SIMPLE!
SO GOOD!
The next meal was simple and didn't need me to hang around in the kitchen- which was great because I was super hungry (it was past dinner time... I had just seen The Fault in our Stars! SO GOOD!) and I needed to shower and do some homework etc. So I didn't want to cook an elaborate dinner- I wanted it to taste good though!
Enter mug of deliciousness!
Here's what you do:
Steam up some veggies (like- pumpkin, parsnip, potato, sweet potato and beetroot) for about 20-30 mins) and mash!
Chop up some chili tofu:
Add some greens (spinach and frozen peas)
Stir:
Place in mug (I have a thing with mugs, hey?)
Top with a big spoon of hommus:
Enjoy!
While the veggies steamed I could do everything else :)
Lastly a simple green brekky:
Two slices of rye toast, topped with some vegemite and mashed avocado
and two soft boiled eggs with runny yolks for dipping :)
Also- in the background:
A green nudie juice (no added sugars- all natural, just fruit and veg!)
YUM!
See- sometimes simple is best! I still love my extravagant creations, but sometimes you just need to get back to basics- my tummy seems to thank me for it :)

Thinking Out Loud Thursday!
Hello people! And welcome to my first ever Thinking Out Loud Thursday- hosted by Spoons- where I can ramble on about anything and everything! Finally!
So lets get started shall we?
Did you know it was National Running Day yesterday? Yeh, I didn't! And so I decided to have a rest day! I made up for it this morning though- in the wee hours of the morning (5:30am!) and ran my little heart out- I'm always a little late with everything it seems!
So what did I do yesterday?
Well, I ate a fabulicious breakfast of overnight greek yoghurt oats, with some home made peanut butter cheerios and a mango drizzle... and once again left my cameras memory card in the computer.
So- no pics, and no recipe... yet!
My exercise may not have been running yesterday.. but it was the high ropes course at school! In our out-door education program we get to do rock climbing and belaying and all that kind of stuff, so I got to act all awesome and walk on a beam and wire, almost touching the roof! I also became my inner-spiderman coming down... #upside down :)
Yep- that was me :)
I also had never belayed before (which is like pulling the rope so there's is no slack and making sure you lock off if the person climbing falls..) and probably didn't pick the best time to tell the climber this- as she was climbing the ladder
Hmmm.. that's a pretty scary cat..
That's better- does anyone else love lolcats as much as me?
Well that's the majority of stuff that's been whizzing about in my brain, there will be recipes soon- if I remember my memory card! :)
Now I will leave you with some fun facts:
There are more fake flamingos in the world than real ones!

WIAW#8
Hello, hello fellow readers, writers, musicians, students, maths whizzes...
Yeh- WELCOME EVERYONE! To another WIAW- Steph style (Which simply means anything but what I ate Wednesday!)
Confused yet? Great.. let's begin!

Breakfasts:
Super thick, super chocolatey Green Smoothie!
There are only a few ingredients in my recipe:
Frozen banana and half a frozen avocado, a few slices of cucumber, some oat milk, 1 scoop of chocolate protein powder, 1-2 tablespoons of raw cacao, a dash of cinnamon, 1/4 cup of rolled oats, 1 teaspoon chia seeds, 1 large handful of spinach.. is that it? Oh-wait no- don't forget the scoop of nut butter!
Thick enough for a spoon :)
In other big news- I had yoghurt again for the first time in over a year- Plain greek yoghurt, but still!
Why? Because I felt it was time... and I was missing the taste of yoghurt :)
I made a parfait:
Greek yoghurt, sliced banana, easiest jam ever, and coconut and peanut butter granola (I will get around to a proper recipe for this soon!)

Because I'm not into overly sweet foods, this yoghurt was perfect!
YUM!
I also made some more cookies :)
And some of the creamiest banana soft serve ever! (It was a frozen banana chucked in the food processor with a spoon of almond butter)
Lastly of my list of delicious brekky's was this mornings- A classic:
Almond butter and banana toastie :)
In the background was a mango smoothie- I was feeling lazy, was sick of my big blender and my small food processor was just staring at me. So I chucked a handful of frozen mango, the little bit of leftover banana and a cup of oat milk in it and whazzed until smooth- genius!
And made just enough:
Mmmm...
Lunches:
It seems as I go through the meals, there are less and less photographs.. Breakfast is definitely my favourite meal of the day!
A toasted wrap filled with scrambled eggs, wilted spinach, sauteed mushrooms, capsicum, peas, corn, tomato, hommus and some olives, with a side of roasted pumpkin :)
Good:
Better:
I aslo enjoyed the last of my butternut pumpkin by... roasting it's butt!
Filling it with a chili pesto pasta with green and drizzling over some vegan cheese then, back in the oven for 5 mins to brown up 'cheese'.
It didn't all fit in the butt(ernut) pumpkin:

Lastly for lunches was a delicious open sandwich:
With a side of bean salad and two poached eggs with hommus:
On my open sandwich was a spelt flatbread, hommus, spinach, grated carrot, cherry tomatoes, capsicum, cucumber some torn apart veggie burger and two slices of the biggest tomato!
Yum, yum!

Snacks:
All my snacks seem to feature fruit and soy milk, because that's what I always feel like!
A pear with a glass of soy milk, with a curly straw ;)
Dinners:
You know how I said the pics get less- yeh, well- I have no pics of dinners!
But that's a little glimpse into my food experiences, I hope you got some inspiration, entertainment, or at least a grumbly tummy!
