Why I Love Food! ♥

Reason #1
Breakfast! Why? Because Breakfast seems to be the time of the day where I am at my most creative- food wise and I seem to go crazy!
Today's breakfast...
Coconut banana yoghurt with peanut butter granola!


Firstly I put 1 chopped banana, 3 scoops of greek yoghurt, some melted coconut butter and oat milk into my beloved mini food processor and whazzed!
Popped in the fridge, turned on the oven, put some muesli in a bowl with some melted peanut butter and milk and rubbed in with my fingers. Then I placed it on a baking tray and cooked for about 15 mins and topped my yoghurt off!
DEEEE-LICIOUS!
Reason #2
Bread!
I love bread soo much- not so much the plasticky white stuff, but wholegrain, seedy, bready goodness- like purple wheat paninis!
Filled with a giant sliced tomato, hommus, grated carrot, grilled veggie burger, hommus, smashed peas, salsa, spinach and grilled mushrooms- which was then toasted- nice and toasty☺
Reason #3
Food is awesome. Not only can it taste awesome.. but it can look awesome! And no I'm not talking about artificial blue skittles or rainbow lollypops- but foods that already look awesome- picked straight from the ground!
For example in yesterday's lunch...
Organic blue maize tortilla chips! With a side of home made salsa
Naturally purple! I mean... WHAT!?!
In my salsa were red kidney beans, avocado, corn, carrot, capsicum, spinach, tomatoes and topped with a blob of hommus :)

Reason #4
FAT!
Well, the healthy delicious kind :) My diet is probably mostly fat.. I love it soo much, nut butter, coconut butter, seeds, nuts, avocado, tahini, olive oil, etc.
Especially when dinners turn out like this:
A baked sweet potato topped with almond butter with a side of beans, brocoli, brussel sprouts and...

Best. Dinner. Ever!


So there you have it! 4 of the 10029384086748 reasons why I love food :)

Pancake Sunday- plus everything else!

OH.MY... GOOSE! People you do not know how much school work I have yet to/ have already done!
High school is insane and my brother and sister just laugh at me (both at uni) saying that the real world isn't even like that (the line the teachers keep feeding us- 'We are preparing you for the real world!') I just can't seem to comprehend how they expect us to complete two assignments both due on the same week, with exams the following week- and that's just one subject!
Look at it all!

Ok rant over- In good news.. it's pancake Sunday! So I made chocolate chip banana pancakes :)

Ingredients:
chia gel- 1 tablespoon chia seeds+ 1 tablespoon milk of choice
43g wholemeal spelt flour
30g rolled oats
10g coconut flour
1 cup milk of choice (I used oat milk)
1-2 tablespoons of choc chips (I used cocoa nibs)
1 banana, chopped

Method:
1. Place flours, oats, chia gel and milk in a bowl, stir to combine, add the cocoa nibs and banana, then let sit in the fridge for 5-10 mins to thicken

2. Meanwhile, if you're like me you can make a super simple frozen berry yoghurt to go with it:
Berries:
3 heaped tablespoons of plain greek yoghurt (I'm obsessed!)

Whaz!
Place in bowl/ jar in the freezer until needed.
3. Retrieve pancake batter from fridge and whisk slightly
4. Heat a fry pan with some oil on low/medium heat, pour on some of the batter (I would recommend smaller cakes as these are more fragile- being vegan)

Wait for 30 seconds to a minute before trying to flip... then flip!
 5.Turn onto some paper towel when ready and make the next batch with the last of your mixture
6.Top with anything you like! I chose peanut and almond butter:
Enjoy with/without the frozen yoghurt!

Recipe-picture style!

I love recipes that are done in pictures- I understand them better- so I decided to do one. I guess it won't be a complete pictures only recipe- but close enough!

So yesterday I had one last plain greek yoghurt sitting in my fridge and thought- hmm, what else can I do with this?
So... I got this:
My mini food processor:
A frozen banana
My last plain greek yoghurt
And a spoonful of peanut butter (any nut butter is fine :)
 And whazzed them together:




I then placed it in a bowl
And stirred in about 1/4 cup of muesli

Then.....
I got these bad boys out:
And filled them up (about 3)
They were then placed in the freezer overnight
Next morning wake up bright and early and go for a run..
Reasons behind this- in Australia, it's winter right now and I had made ice creams for breakfast- I had to be hot and sweaty! Reason two- it's my favourite time for a run:
 Finish run- arrive home:
 Take ice creams out, slide a knife down sides:
 Place in bowl of water for 20 seconds:
 They should pop out then:
 Oh and don't forget to make a mistake!
 Melt some coconut butter with a touch of milk (any milk) in the microwave:
 Drzzle over ice cream and push on any toppings you like (it should set hard)
I chose cheerios!
 Enjoy!
