WIAW! (Tuesday!)

Yayayayayay! Exams are over. O-V-E-R! Well I still have to do a maths general exam, but I'm not too fussed about doing that after the extension exam.
I've also got to ask... Is it worrying that I think my society and environment essay was better than my english one? :0
Anywayz, enough about that because it is over!
Onto the fooood. WIAW style (using my Tuesday and Wednesday eats :)
Stressful times, call for simple delicious meals... and every single one of these were simple and delicious!
Today's Breakfast!
I began the day giving my brain the best start it could with some ultimate brain foods (well, I 'm pretty sure they're brain foods, my tummy liked them... so there for my brain must too!)
Easy-peasy simple-pimple home made wholemeal spelt bread (say that three times fast!) smothered in the little bit of peanut butter I had left and cashew butter :)
Also some home made-ish blueberry yoghurt (see- brain food!) Made by whazzing together some greek yoghurt, a handful of blueberries and a banana together in my trusty mini food processor!
Yum!
Most was scooped up straight into my gob, but some...

It was gone too quickly :)
And no, I was not procrastinating about getting ready for school (and therefore exams) by taking millions of photos of my breakfast.. that much.
So I sat my first set of exams yesterday, shushed my rumbling tummy and made it out (at about 1:45pm!) just in time for the sky to open up. It poured! I found my friend, whom I knew had to walk home and called my sister to come and pick us up. By the time I got home it was 2:15pm and I was seriously ready for lunch!
(This was yesterday's lunch- I didn't have my delicious bread twice in one day, it's something I would do though...)
Quickest thing I could throw together to satisfy my stomachs protests!
I boiled the jug, chopped my bread, boiled my eggs, mashed my avocado, heated the beans, spread the spreads and sat down to eat at approximately 2:30pm! I mean come on people- that is not lunch time!
Today's lunch was a lot less stressful and I managed to eat at about 2:00pm (still!)
 A wholemeal wrap with a torn up veggie burger, grilled mushrooms, capsicum, asparagus and pumpkin, sliced tomato, hommus, spinach and salsa :)
Last nights dinner was stress-free, easy, don't-have-to-think-about-it, Steph's go to dinner:
A mixed veggie mash:
Steamed, pumpkin, parsnip, beetroot, sweet potato, potato and carrot, mashed together with peas, lentils, garlic tofu, steamed brussels sprouts and topped with nutritional yeast.
So not too inspiring, but if you stick around there might be a fun purple-post in the near future (how many things are purple? Well enough for me to post about it!)

Examination=crazy

Hello, hello friends!
Dreadfully sorry if this post turns out wishy-washy-upsidowny-crazy-hazy! I just had exams! Maths and English no less!
My brain is fried!
One way to combat fried-brain-ness is a goooood breakfast. Like mine this morning:
I had this lurking in the fridge...
And decided to make one of my all time favourites! Rhubarb crumble! With some alterations of course ;)
Firstly, it was baked rhubarb oatmeal with a cashew nut crust.... but it was good people!
Intrigued? Of course you are :)
Ingredients:
1 rhubarb (stick?)
1/2 banana
1/2 cup rolled oats
1/4 cup muesli
1 cup milk of choice (I used oat)
sprinkle of chia seeds
1 big tablespoon nut butter of choice (I used cashew butter)
optional- coconut butter for top :)

Method:
1. Preheat oven to 180 degreese celsius, grease a mini loaf pan
2. Chop rhubarb:
3.Place in saucepan with thinly sliced 1/2 banana, chia seeds,  and rolled oats:

4. Add milk:
5. Stir every so often on low/medium heat until banana disappears and rhubarb softens and milk is absorbed:
 6. While that's happening place nut butter and a small splash of milk in a small bowl and microwave for 30 seconds, rub muesli into it:
7. Pour oatmeal into mini loaf pan:
8. Top with nutty muesli:
9. Bake in oven for 10-15 mins until golden brown on top! In the meantime with half of your banana you can make a smoothie- I used half a banana, 1 handul of frozen mango and about a cup of soy milk, whazzed up together- so simple, so good!
10. Remove from oven to cool for 5 or so mins... then enjoy!
There it is with my yummy smoothie!

I love that it's slightly pink :) It's also nice and tangy- not too sweet, the banana adds all the sweetness necessary!
Now, back to relaxing... and thinking to myself that they should let us type our essays...handcramps hurt! Holding spoons don't though ;)

Where's all the time gone?

I swear, these exams on Tuesday & Wednesday are going to be the death of me! For Society&Environment I had to make an info graphic (yes another assignment along with studying for exams!) I just coulnd't seem to get the hang of them. I spent all of Friday afternoon trying to finish it so I could have all weekend to study... yeh, that didn't work. So I took a break (went to sleep) and woke up bright and early (5:30 ish) and got to work. The amazing part- I did it!

So that was good. The rest of the day was filled with revising, writing practice essays, doing past maths exams and reading. It was also very cold yesterday, so I also spent the day... in ma onesie!
I was a nice and toastie panda :)
I finished my info-graphic at around 7:45 ish and was STARVING! So I quickly whipped up some pumpkin cookies (same recipe just with pureed pumpkin- I had some in freezer) with some sliced apple nut butter sandwiches :)
Drizzled with greek yoghurt (I still can't tolerate milk, or those fake-sugary yoghurts, but plain greek yoghurt seems fine :)
Then I went grocery shopping with mum, went for a run, got straight into some maths study and there goes my rumbling tummy again- Lunch time!
I had 3/4 of a tin of black beans in the fridge- to me that spells BURGER!
Ingredients:
Black bean burger: yields two burger patties
3/4 tin of black beans, drained and rinsed
1/2 a red chili, chopped
a dash of cinnamon
1-2 teaspoons cumin
1 clove of garlic
1 handful kale
1/4-1/3 cup bread crumbs (I used gluten, wheat & diary free, quinoa crumbs)
peas, corn, capsicum (whatever you want to add)

Rest of stuff:
1 multi-grain bun
vegan cheese
spinach
tomato
grated carrot
and cucumber

Method:
1. Place black beans, chili, garlic, cinnamon and cumin in a small food processor:
Whaz!
2. Add in the kale and whaz:
3. Spoon out into bowl, stir in bread crumbs and other add-ins:
4. Roll and flatten into patties, place on plate lined with baking paper, put in fridge:
5. Meanwhile, clean up the mess..
6. Chop up veggies, split bun, make vegan cheese
7. Heath a small fry pan over medium heat with some oil, place a patty in (you can cook both of them- if you're hungry, or freeze the other one) and flip once browned:
8. Turn your oven onto 180 degrees celsius- grill. Line a tray with baking paper, place on the bun, then the burger then some drizzled vegan cheese
Place in oven until top of bun is toastie and cheese is slightly brown.
Place veggies on top, top with bun and eat!

In other news (well it's still food news) for dinner last night I tried a new veggie!
Those white things are... celeriac wedges (Peeled celeriac, cut into wedges, rubbed in olive oil and roasted for 40 mins- 180 degreese celsius)
Drizzled with some tahini= DELICIOUS!

Delicousness=Ugliness... sometimes!

Most of my favourite meals to make and eat are... messy, sloppy, hard to eat and completely un-photogenic!
Like this delicious green chocolate protein smoothie.
Well, this happened again the other night. I wanted needed a warmed Mexican wrap. I thought.. yeh, that'll look great for the blog- all bright and Mexican-y.. yeh, well, it didn't. It sure did taste fantastically good though!

It was some quorn mice with black beans, corn, peas, tomato and capsicum, heated in a small fry pan with some taco seasoning and water, until all the water was absorbed and it smelled delicious! Then along with some hommus,spinach, salsa and avocado, I wrapped it all up in a multigrain wrap, then in some foil and placed it in the oven for 10 mins :)
Sooo, good- t'was hard to eat though ;)
There were also some yummy roast veggies alongside!
Carrot, parsnip and sweet potato :)
So that was the ugly dish, not to worry, there were some better looking ones, like last night's dinner:
Gluten free pasta spirals, with some steamed + mashed pumpkin, sweet potato and parsnip, some oven roasted tomatoes with black pepper, mixed 4 beans, peas, spinach and a topping of vegan cheese (heated in microwave for 30 seconds)
I also had some fabulous school lunches like..

 Mix it up with some garlic tofu!

And a salad of spinach, grated carrot, tomato and capsicum

Lastly I want to leave you with today's breakfast... because it was just plain delicious!
But firstly, look at how perfect this avocado is:

Ok randomness over :)
I made some homemade granola with cashew butter (melted cashew butter and milk mixed in with muesli and oven baked for 15 mins) and also some coconut, peach yoghurt!
1 peach + melted coconut butter +oat milk: Whaz!
Plus 3 spoonfuls of greek yoghurt:
Place in jar alternating with cashew granola!
Ok, so this post was random, picture-filled and full of food- just the way I like it!
