It's pretty obvious (judging by the number of recipes) that breakfast is my favourite meal of the day. Dinner is probably my least favourite.
Usually, I've come home from school, or wherever, have done some homework and want a simple esy dinner, like roast veggies, a mixed veggie mash or even just eggs on toast.
So I sometimes get a surprise when my creative pants stay on that little bit longer and I make a truly awesome (delicious) dinner!
Some recent ones include:
A baked sweet potato with a side of chili pesto pasta, steamed greens and cannellini beans topped with some vegan cheese (heated in microwave for 30 seconds)
Super colourful, veggie-filled and more importantly mout-wateringly good!
* Sorry about the awful pictures (automatic flash alert!) but dinner is at night time, night equals no natural light and light box is too far for my lazy body to walk ;)
I still think it looks pretty yum!
My other super good dinner was... a hot dog! Of course knowing me, I changed it up a bit!
My 'hot-dog' dinner turned out to be a spelt hot-dog bun with some hommus, spinach and tomato, topped with one of these awesome vegan sausages and some salsa!
On the side was some roasted potato and celeriac and also a pumpkin mash with spinach and the other sausage I cooked up, torn apart.
Again, the horrible photograph does it no favours at all, but trust me when I say it was good!
Now I need to get back to my simple-pimple dinner of roast veggies and quinoa (that I'm preparing at 4:45pm) so dinner will be ready when I come back from Zumba! (7:30pm) Does anyone else love cold roast veggies?

Real rhubarb crumble and confusion :)
Remember this post? It was my oatmeal-ified version of rhubarb crumble. Recently however, I made a much better version of a real rhubarb crumble!
A rhubarb apple crumble to be exact!
It's a pretty simple recipe with all natural healthy ingredients, no added sugar, no dairy, no wheat, no butter, no eggs etc. So here it i:
Ingredients:
1 rhubarb stick, chopped
3/4 of a green apple, chopped
1 teaspoon chia seeds
a dash of cinnamon
Crumble:
1/2 cup muesli
1 1/2 tablespoons nut butter ( I used cashew butter)
2+ tablespoons of milk ( I used oat milk)
a small handful of blueberries (optional)
Method:
1. preheat oven to 180 degrees celsius
2. Place the rhubarb, apple, chia seeds and cinnamon in a small saucepan and place over low heat:
3. Keep stirring occasionally until the rhubarb and apple break down and sort of start to smoosh together:
4. Leave a side while you make the crumble.
5. Place the muesli and blueberries in a bowl with the milk and stir. Heat the nut butter in the microwave for about30-50 seconds until melted, rub into muesli.
6. Pour rhubarb mixture into a ceramic mug (that can go in the oven) or small oven dish and top with the crumble:
7. Bake in the oven for 15-20 mins until crumble is golden and mixture is bubbling! (yourkitchen house will smell amazing)
8. Leave to cool slightly... then enjoy!
Super yummy, warm, nutty, gooey mmmmm
I enjoyed mine with a cool glass of soy milk... because I went against my instructions and did not wait for it to cool, so the soy milk was very helpful..
Hmmm, too hot! What to do?
Genius!
Now onto some other fun news. Getting stuff for free!
There are many downfalls with shopping for food with me:
1. I don't take a list
2. My tastes are expensive (hello chia seeds, quinoa and coconut flour!)
3. I'm not really old enough to buy my own groceries.. sorry mum!
But there is one positive!
1. I buy the weirdest things, even if I don't know what they are, just to try them out!
Why is that a good thing? Well, yesterday was a prime example.
I had spotted this round green vegetable (later found out to be a green Kohlrabi) and chucked it in the trolley. Later when we were at the cash register, the checkout person was stumped. I ran to where I found it and came back to spell her the name printed on the sign. It didn't turn up on her computer... so we got it for free!
I got some other weird stuff too:
In the back is my free Kohlrabi, then in front is a gem star squash and the little red thing is a tomarillo.
After coming back from shopping, I was hungry and I felt like soup :) (It's Winter in Aus!)
I also wanted to use the gem star squash:
So while I heated up my split pea soup on the stove, I cut this bad boy in half, drizzled with a bit of oil and roasted for 30 mins:
Then scooped out the seeds.
I also made some chickpea flat bread (chickpea flour, oil, greek yoghurt mixed with hands, rolled and placed on pan on high heat)
And lunch was done!
Soup, squash and flat bread :)
Look, it's sort of like a spaghetti squash (lot's of ideas for new uses now!)
This soup was awesome! I bought it because it was vegan with heaps less sodium that all the other brands (118mg per 100g)
And the flat bread was perfect :)
And.. dip!

Frozen bananas. What can't they do?
Well, they can't do a few things, such as fly a kite or do a cartwheel- but they can do a bunch of other stuff, that I think is pretty cool! I especially like that by carrying out the act of chopping up a banana and placing it in the freezer, you have ice-cream the next day! Even if you don't whaz it up in a food processor!
Over the past week I seem to be loving on these frozen bananas even more so than usual! BTW,it's winter here in Aus... I know, weird right- you'd think I'd want my banana whipped into warm oatmeal...
First of all, I had an almost empty jar of peanut butter. Usually that means hot oats in a jar. I wasn't feeling oats that day. I wanted ice-cream (I think it was 3 degrees celsius that morning?) So I made the most delicious chocolate icecream.. because what better combo is there than banana, chocolate and peanut butter?
I simply placed 1 large frozen banana, 1 tablespoon raw cacao, 1 scoop chocolate protein powder, a dash of cinnamon and 2 scoops of greek yoghurt (can easily be taken out if you don't eat dairy etc.) whazzed it up together and created something that reminded me of a super duper rich chocolate cheesecake :)
Then placing it in an almost empty jar of peanut butter, leaves every spoonful even better than the one before:
In the background was some muesli which was added to oat milk and coconut butter heated in the microwave for thirty seconds to make coconut milk :)
My next frozen banana extravaganza was one you have seen many times on this blog:
A super thick green smoothie!
In it was 1 frozen banana, 1/2 frozen avocado, 1 large handful of spinach, 1 large handful of kale, sprinkle of chia seeds, scoop of vanilla protein powder, 2 tablespoons raw oats, 1 tablespoon mixed nut&spirulina spread and about 1/2 cup- 1 cup of milk of choice (I don't use too much as I like em' thick!)
And boy, it was thick!
Lastly I made cookies (yes I still love cookies!)
Big chewy cookies :) No recipe though, but there are a few on my recipe page :D
There was half a banana used in them, the other half I whazzed up with some frozen mango (not frozen banana, but by whazzing them together, I'd say it counts) with 3-4 big scoops of plain greek yoghurt to make a tropical frozen yoghurt!

So, yeah. This was just my little tribute to frozen bananas because I love them sooooo much!

Purple town :)
I was gonna name this post blue-da-ba-de-da-ba-daaa! But then I figured while all the food featured in today's post may be called blue_ something, it really is purple!
I love the colour purple. As a child the answer to 'what's your favourite colour?' was always PINK AND PURPLE!
So last week (unintentionally) I managed to incorporate quite a few purple foods into my meals, which is pretty tricky seeing as most natural foods aren't naturally purple!
Behold- breakfast: Blueberry (purpley) oatbran!
With a glass of soy milk :)
Here's what ya do:
Place about 1/4-1/3 cup of oatbran in a saucepan with some chia seeds:
Add a scoop of vanilla protein powder:
Add a thinly sliced banana:
And of course some blueberries:
Place about 1 cup (maybe more, depending on how you like your oatbran) of milk (I used oat milk) and stir to combine. Place over medium heat:
Keep stirring until it forms this:
See purple!
Pour into bowl (or mug!) and top with nut butter! Or anything you like really :)

Then lunch rolled around... I was feeling Nachos :)
And yay.... another photo recipe (I find them sooo much better!)
Steam some veggies to make a mash (pictured below is some parsnip, sweet potato and carrot)
Then I put some Quorn mince (vegan mince), 3 cherry tomatoes (split in half) a strip of capsicum, a mini tin of drained corn, some peas and a mini 4 beans tin (drained) in a small frypan with about1/2 cup of water and 1-2 teaspoons taco seasoning:
I cooked that until all the water disappeared.
Then I made some simple guacamole, with half an avocado, some lemon juice and leftover corn kernels:
Whaz!
And began to layer-up!
Some organic blue-maize tortilla chips:
Vegan cheese:
Mashed veggies and Quorn mince taco mix:
And.. guacamole!
I love nachos so much- it used to be one of the only things I would order when we went out to a restaurant as a kid (the plate was always huge!) that and Margarita pizza (again always huge!) but my home-made nachos win hands-down! Deeee-lish!
I also think the purple chips are cool too, and are pretty strong...
Don't forget to tune in next time for something that may involve an almost empty jar of this stuff:
