de-constructed cheesecake

Phew! 2 purely twins workouts and cleaning of the house ( having friends over) down and I am finally here to talk to you guys about my favourite subject! Food!
I am still in a day-dreamy haze over my breakfast, because it was simply. that. good.
I call it the deconstructed cheesecake:
However all you can see is the nutty granola on top :)
Underneath is a silky smooth and soft vanilla cheesecakey ice cream (can be easily vegan)
It's super healthy, (taste can be very deceiving) full of fibre and chock full of protein to keep you full until next week!
De-constructed breakfast cheesecake:
Ingredients:
For the cheesecake ice cream:
1 chopped, frozen banana
1 scoop vanilla protein powder
3 large spoons of greek yoghurt (simply omit this if you are vegan- to get the cheesecakey taste add in 1 tablespoon nutritional yeast)

For the nutty granola topping: (which would usually be the base:)
3/4 cup muesli
1 teaspoon chia seeds
1 large tablespoon of nut butter (today I chose peanut butter)
1/3 cup milk of choice (I used oat milk)
I also added in a bit of chopped dried fig (optional)

Method:
1. Preheat oven to 180 degrees celsius (350 F) and line a tray with baking paper
2. Place the nut buttere and milk in a small bowl and microwave for 30 seconds, (more or less depending on strength of microwave) until it's melted and you can mix together:

3. Rub into muesli and chia seeds until combined, then place on tray to bake for 15 minutes:
4. Meanwhile make the cheesecake ice cream by placing all of the ingredients in a large food processor and whazzing until smooth and soft-servey (you may need to stop a few times to scrape down the sides)

5. Pour into bowl/mug/jar and place in freezer until required:

6. Once the granola is ready and golden brown,
remove from oven and place on another plate to cool for 5 mins (It's so hard to wait- but you do have a bit of this leftover... no wasting going on here!)
7. Remove ice cream from freezer and top with granola:
Sprinkle sprinkle:

8. Enjoy! I know you will!

Just like eating an upside down cheesecake :)
 Nom
You all know that pretty pictures do lie sometimes- the only way to truly enjoy this dessert breakfast is to moosh:
Nom nom nom!
Coming up tomorrow? A how-to on home-made coconut butter (it's so simple I feel silly doing a how-to!
Have a fab Monday friends!

In with the new and the old!

If you have been a long time reader of From Steph to Chef, you may have figured out my absolute favourite breakfast, or even my absolute favourite food for that matter.
Of course I am talking about the delightfully delicious peanut butter and banana toastie! I was going through my photos and realised just how many times I have photographed this one breakfast! So I made a little collage for you:

Today I realised I hadn't had one of these in yonks (like maybe more than a month!) and decided that I needed to fix this:
Paired here with some mango froyo!
If I had to choose my next favourite breakfast, it would be simple creamy banana oats, and of
recently- steel cut oats:
1/3 cup steel cut oats + 1 cup milk ( I used oat milk) + 1 sliced banana
Let bubble away for 10-15 mins, stirring occassionally- then I usually have to add a touch more milk, bubble for 5 more mins, then I just like to let it hang out in my bowl (mug) for 10-15 mins, to cool and let the flavours infuse)
Eaten here with a simple berry smoothie:

With a spoon of peanut butter and a dash of cinnamon:
So as you can see I like sticking to my tried and true old recipes, but I do love to experiment in the kitchen as well- just check out my breakfast page!
After working hard at cleaning my room (I mean cleaning!) something I haven't done ever! I went through everything and through out maybe 50% of my stuff (well gave it to the op-shop)  I figured I needed to make my room more 15-year-old-y and so I've also started on a secret project which I shall reveal to you when I have finished! Anywho, I was working up an appetite and quickly whipped this up:
Another oldie but a goodie- a toasted wrap!
spread with hommus, topped with spinach, grilled veggie burger, grilled capsicum and mushrooms, sliced tomato and avocado, grilled in a sandwich press.
check out my awesome wrapping skillz:

It's also very nice and neatly tucked in there:
My new lunch was a delicious salad, with a side of roasted pumpkin and organic vegetable tortilla chips:
The salad was soo good. After reading this post, I decided to cut my veggies up nice and small so I could have a taste of everything all at once- genius!
In it was torn spinach and kale, diced tomato, carrot, capsicum, peas, beetroot (cut into matchsticks) dried tomato strips, chopped chives, basil, garlic tofu and a nice squeeze of lemon juice= yum!
So colourful :)  The roast pumpkin was simply cut then drizzled with olive oil and roasted at 180 degrees celsius for 30 mins.
This lunch was pretty darn tasty and filling!
And now I just want to leave you with a pic of last nights sky:
Because pink really is everywhere :D
Have a fabulous Sunday everyone!

Blogger shout out!

Happy Friday everybody! TGIF, am I right (well, everyday feels like the weekend for me.. have I mentioned I'm on holidays? ;)
Speaking of hols.... I now have plenty of time on my hands, meaning plenty of time to make delicious breakfasts, lunches and dinners!
So without further a do, a post given to you, that's truer than true, about food.. woohoo!
For breakfast this morning I made a Running with Spoons creation (blogger shout out!)
It was her recently posted banana bread mug cake!
And my own recipe for mixed berry yoghurt (thawed mixed berries, 1/2 banana, 3 spoons of greek yoghurt-whaz!)
I microwaved my cake for a bit long- but it was still really good!

And of course my amazingly difficult recipe for berry yoghurt was awesome too ;)

Lunch time!
I love telling people I had something for lunch but not explaining it any further and watching their confuzzled faces :)

Example: I had a hot dog with fries yesterday for lunch :)
WHAT!?
Well... a wholemeal spelt hot dog roll with some hommus, 2 mini veggie sausages, salsa, plenty of salad and sweet potato fries:
Gotcha!
It was soo tasty though (I think my healthified version is even better than the original!)
Sweet potato fries:
Drizzled with olive oil and roasted at 180 degrees celsius for 25 mins-ish:

I bet you can figure out how I managed to make the hot dog- bun, hommus, spinach, tomato, veggie sausages, salsa:
 Om Nom:
Dinner, dinner, dinner, dinner, dinner, dinner, dinner, dinner- BATMAN!
Wow, there must have been something in that banana cake!
Dinner was an original recipe of mine:
Oven baked bean balls!
Ingredients:
1 pearl onion sliced
2 button mushrooms sliced
1 clove garlic, crushed
5 semi-dried tomatoes
1 sprigs worth of rosemary leaves
3/4 cup red kidney beans and lentils (drained and rinsed)
extra water

Method:
 1. Preheat oven to 180 degrees celsius, line a tray with baking paper
2. Place everything but the beans and water in a small frypan with 1/2 tablespoon olive oil:
3. Place on medium heat stirring until caramelized:
Hello flavour!
4. Place beans, lentils and onion mix in a small food processor:

5. Whaz until smooth- adding water until it looks like this:

6. Use a spoon to form into balls and place on a baking tray:
7. Bake in oven for 25-30 mins until golden brown:
8. Serve with anything you like (spaghetti, sauce, veggies)
I served mine atop a steamed veggie mash with peas and spinach:

With a little salsa over the top:
Yum!
Breakfast, lunch, dinner and no sign of pre-packaged convenience foods!
Have a great day! :D
