WIAW #80 Eating to fuel the brain :D

Happy Wednesday friendly friends!

I'm not going to lie though, I had to check what day it was today because my brain is so deep fried right now it could give me heart disease!

Ahhh, good one Steph!

Yes, so as you can tell the exams are sucking out all of my sanity and I am saving my normal-sounding sentences for those never-ending blank lines that always ask so much of me!!

Anywho, today's not about proper English and fully formed sentences. Nope- today's about FOOOOOD. In the form of WIAW of course! So let us enjoy a day full of eats!! Thanks as always to the wonderful Peas and Crayons for creating this link-up and enabling me to drool over what everyone else consumes in a day. :)

Breakfast:
When I am in the midst of exams it is fundamental for me to do two things beforehand.
1. Move.
At least a little bit.
It gets my mind a-thinking! So today I did my daily fitness challenge and then did a quick Blogilates workout! They may be short and sweet but boy do they get your heart rate up!

And number 2?
Eat something utterly delicious!!
For some reason these past few days have seen a barely there hunger and a bit of a wonky stomach. Strange... probably stress, who knows?
So instead of a big bowl of flavourful, sticky, delicious oats, I went for a tall creamy jar of smoothie!
This guy was a banana-berry green smoothie bash and totally hit the spot!
Frozen banana + frozen mixed berries + frozen zucchini + kale + spinach+ greek yoghurt+ oats soaked in almond milk + mixed nut butter + water- whazzed until smooth!
I love how filling this guy was!
After 3 hours of chemistry... yep, chemistry.. I needed some tasty vibes.
So between two pieces of delicious light rye bread I placed some hommus, grilled veggie patty, shredded carrot, cucumber, tomato, capsicum and shredded lettuce:
Easy, simple, and delicious!!
Snack for today was at around 4pm after some more studying for my economics exam and involved some brilliant brain food:
Fruit and soy milk!
Some yummy crisp and sweet brown pear, and kiwi fruit :)
As dinner time rolled around I was in the mood for some roast veg (they have been a big hit with me lately!) which included pumpkin, broccoli, brussels, eggplant, potato, parsnip and swede:
There were also some lentils and spinach thrown into the mix for extra nutrients and filling factor :D
Afterwards I had four pitted dates to round out the day and end on a sweet note!

So that's what I ate!!

Thing that has made you smile uncontrollably lately? I would have to say it has been my friends sending me random videos of them singing along to random dubsmashes. They are strange ones! But oh so funny :P

Exam fooooood

Hello folks!
How's your week been traveling so far? I am currently in the midst of exams (Tuesday, Wednesday, Thursday, Friday this week!) so things have been a tiny bit stressful over these parts but not too bad because my secret weapon is staying positive! That was not supposed to sound as lame and childish as it did, but in all seriousness a positive mind is so, so powerful!!

Any who, I didn't say it was my only secret weapon though.

The other?

Why, it's none other than a super healthy, delicious AWESOME breakfast to power my brain through the multiple hours in front of an A4 booklet of paper.

Featuring bananas, oats, protein powder, cinnamon and all the other good stuff, here is one of the breakfasts that fueled me:
Yep! I made an oatmeal bake!! Something I haven't done in quite a while! You can check out one I made a while back here.
To make this little beauty I simply cooked up 1/2 heaped cup rolled oats with 1 cup almond milk, 3/4 sliced banana, scoop of vanilla protein powder, dash of cinnamon and sprinkle of chia seeds until the liquid was absorbed (I added about 1/4-1/2 cup water as well for a little extra volume)

Then I lined the bottom of a  mini loaf pan with baking paper, sprayed the edges and pured the oat mix in, topping off with the remaining sliced banana:
And baking in the oven at 180 degrees celsius for around 20 mins, or until banana has caramelised and top has hardened:
Of course it wasn't complete yet...

A nice slathering of cashew butter topped it off with a bang!
Eaten alongside a refreshing cup of cherry fro-yo (handful of frozen cherries + 3 big scoops greek yoghurt- whazzed together until smooth) which complemented the baked oatmeal quite nicely.
This was so delicious; warm and gooey, mixed with random sections of hot, sweet banana and warm fudgey cashew butter..
Belly was happy!
And sure, sometimes when you're in exam week, breakfasts can be a little more... haphazardly delicious instead of looking utterly perfect...
In that instance, you simple make your delicious creation and shove it in an almost empty jar of nut butter:
There are no words :)

In the mix was steel cut oats, cherries, chia seeds, banana, almond milk and water- cooked until absorbed in a saucepan and then stirred together with some greek yoghurt.
Soooo tasty!

And I'm also not gonna lie- the dinners have been simple, strange and whatever foods I've been feeling like chucked in a bowl and consumed in great speed. Because hey- exams!?

Any who, a week and a bit left and then I am free as a bird to cook and create and EAATT to my hearts content! So look forward to that (I know I am!!)

Sunday Pancakes and Links!

Hidy ho friendly friends!

I hope you have been enjoying your weekend so far- and you have probably been enjoying it a lot more than me at the moment (weekends don't really feel like weekends when the entire day is spent studying and then working...)

Alas, that is life at the moment and in times like these we just gotta keep our heads down and keep pushing forward!!

Ok, motivational sesh over- now onto some of the better stuff in life:
FOOOOD!
*In particular; PANCAKES!!

In keeping with the Sunday pancakes tradition I whipped up a batch of lemon, vanilla spelt cakes and topped them off generously with either PB or a mixed nut and seeds butter.
I also whipped up some blueberry fro-yo (a large handful of frozen blueberries + 3 big scoops greek yoghurt- whazzed together until smooth)

The pancakes were a simple mix of wholemeal spelt flour, rolled oats,a scoop of vegan vanilla protein powder, a little scrape of a vanilla bean, some lemon rind and almond milk, whisked together until smooth then spooned onto a heated fry pan sprayed with some olive oil.

Thinking Out Loud- On Smoothie Creations

It's no surprise to you when I say I love smoothies.

(Almost as much as it is no surprise when I say I love nut butter. Almost.)

But I'm not going to lie; They are mainly of the same sort of fruit/sweet/extremely thick variety. Because that's the way I like them.

However being the creative food lover I am, I thought it was about time that I explored new tastes in the blended drink collection. (Especially now that I have my hands on one of the most powerful blenders in the market!! ;))

I've seen recipes with a whole bunch of random foods thrown into smoothies ranging from whole carrots, apples, pears, beetroots, cucumber, celery to even cooked and cooled veg, nobs of fresh ginger and even beans!

So, as part of my experimental segment of the week, I decided to concoct different types of smoothies with at least one ingredient I've never chucked in a smoothie before!

Here is hoe it played out:

My first experiment was Sunday morning, after a 10k run, on no fuel (anything over 10k and I usually have a snack)

So I was hangry.

Any who, I stuck to my goals and went about making a smoothie I didn't know if I'd like or not. It was pretty exciting!

Into the supreme blender went 1 stick of rhubarb, chopped, 1 medium banana chopped (I didn't have any frozen but I think it would have tasted better with a frozen one if you do so decide to recreate this), 1 extra large handful of spinach, 1/2 cup chopped frozen strawberries,  3/4 cup greek yoghurt, 1/2 cup water- placed in a blender and whazzed until super smooth!
 Et voila!
The rhubarb added to the smoothie was not bad at all!
Eaten alongside some peanut butter oat balls.
 The rhubarb added a nice tang to the smoothie and I couldn't even taste the cucumber or spinach= major plus for extra veg!!
 I will admit I didn't really love the texture the rhubarb gave it- a little gritty, but I think if I used a frozen banana and maybe some ice it would have been a heck of a lot better.
 But quite tasty, really hydrating and I just felt good after drinking it (I could tell my body was happy :)
The next one featured a surprise ingredient that I adore.

If you read my weekly WIAW, you may have noticed them popping up on numerous occasions every. single. time.

Yes, I am talking about my beloved peas.

Well, my beloved frozen peas to be exact!
 Instead of just eating them straight how they come... I decided to whaz them up into big green smoothie form!
 And it was mighty good!
 To create this extremely thick, creamy, mouth-watering green smoothie, I chucked into my Vitamix 1 chopped, frozen banana + 1/2 chopped, frozen avocado, 1 handful frozen, chopped zucchini, 1 massive handful of spinach, 1 scoop cashew butter, 3 big spoons of greek yoghurt, some oats that had been soaked in almond milk with chia seeds for around 10 minutes, a scoop of vegan vanilla protein powder and 1/2 cup of water
 Whaz, whaz, whaz until smoothy-smooth and enjoy!
(You'll need quite a large straw/ spoon for this one!)
Another couple of serves of veg in your morning smoothie for the win- spinach, zucchini and PEAS!

Lastly, a cool and refreshing addition to a smoothie that also becomes invisible in taste but adds volume and hydration;
 CUCUMBER! Specifically baby cucumber for me at the moment because that's what I happened to pick up at the store. :)

Like zucchini, cucumber has no taste when blitzed up into a smoothie, so was the perfect addition to my Strawberry Dreams smoothie bowl this morning!
Into the mix went 1 chopped, frozen banana, 1 massive handful of spinach, 1 handful frozen, chopped strawberries, 1 baby zucchini- cut in half, 3 spoons of greek yoghurt, 1/2 cup water- whazzed up until smooth:
Being in the freezer for 20 mins:
Stirring to combine the slightly hardened top:

On top I had a mix of cashew butter and peanut butter granola:
 And you know it ended up looking like this:

 So, those have been my recent smoothie adventures, adding in all sorts of different veg to my typical green loves. I must admit, this has sparked a bit of a smoothie bug in me and has started a mad buzzing of ideas in my brain as to what other crazy foods I can whaz up and make delicious!

What is the weirdest thing you have ever seen/ have ever put in your own smoothies? Mine would probably be tofu. And it wasn't bad either!
Smoothie with a straw or spoon? I like the thickness needed for a spoon, but the effort required to slurp it up through a straw ;) Yep, I'm strange like that. :)
