Links for the Relaxing Sunday

Happy Sunday everyone!
The day we relax, eat delicious foods and just enjoyyy!

Quite often I believe we cram our lives with so many activities and commitments that when we finally have a small amount of time to ourselves we are stuck listless with any idea of what to do with ourselves (a.k.a- me every time I find I have an extra minute in the day!) So that is why I believe Sundays were invented. So you can catch up and refresh from the hectic week that was. So you can just stop and maybe even look at the world around you.

So you can go on a nice long and leisurely 10km run and just enjoy it without thinking about all the rest of the tasks you have to do on your to-do list today- or is that just me again?
Whatever the case, my Sundays are used for relaxing and also catching up on some awesome links from the past week!!

#FoodBlogger

Hidy-ho friendly friends! Happy Thursday (I hope everyone is happy!) and I hope the week has been treating you well.

As it is Thursday, it is the day to Think Out Loud and today I'm going to ramble about how Food Blogging and being a food blogger affects my life. Every.Single.Day.

I guess I should give you some background first, huh?

See, I was going about my business the other day when it occurred to me that if my self from 3 years ago watched my daily life now, she would be quite shocked. This also applies to any of my friends if they were to view a typical weekend of mine (I guess I'm not what you would call the 'typical teenager'. ) they would probably laugh and thinking I was pulling their leg.

'Surely you don't actually wake up early to exercise and then grocery shop and actually look forward to it!'

Any who, I thought it would be fun to make a list of all the things I've noticed I do on the regular now that make me the stereotypical food blogger! I hope you find it as interesting as I did to write it (and accept my life)

You know you're a Healthy living blogger when...


You wake with the sun (or several hours prior)...

You wake with the sun (or several hours prior and exercise)

You wake with the sun (or several hours prior) and enjoy exercising!

You choose peanut butter/ nut butter. Over anything

You don't eat unless you've washed your hands you've taken a picture

You scale the grocery store subconciously looking out for fun new products to try out

You know the grocery store back-to-front

You literally point people in the right direction at the grocery store

You're favourite meal is breakfast... or lunch... or dinner... basically you're a fan of meal times

You're camera memory card is constantly full... without a single picture of a human on it

You like to eat carrots on the regular. And sweet potato. And pumpkin.

You have fluoro orange hands


Organisation to you is the state of the per-prepared meals in your freezer

Your runners are the most expensive shoes you own

Your workout clothes are the next expensive thing in your closet

Processed junk is not high on your priorities list

Mass amounts of hommus (on anything) is

BYO food is kinda normal

Now, I could come up with a million and one others but I feel like this is enough for one day. In saying that:

WIAW #77 Eating ALL The Veg!

Hello friendly friends and happy Wednesday!

No time for lengthy intros today, so instead we'll jump straight into the food! Which is what we're all here for any way ;)

Thanks as always to Peas and Crayons for this awesome weekly link-up that brings so many bloggers together and produces so much meal inspo!! :)

Now onto the eats- WIAW style!

Breakfast: 7:15 am
Started the day off on a great, healthy and utterly delicious foot with a big green smoothie and some wholemeal crumpets with home-made cashew butter
 Into the vitamix went 1 chopped frozen banana, a small handful chopped frozen zucchini, half a chopped, frozen juicy orange, 1 large handful of spinach, one large handful kale, 3 big scoops greek yoghurt, 1/2 cup water- whazzed until smooth:

 And crumpets!
 So gooood!! :D

 I love breakfasts where I sneak in extra veggies and have no idea while I'm eating it. Instead just getting the awesome fresh and fudgy tastes of a well rounded brekky!

Snack: 11:00am
Peas. You know it and I know it. Why fix something that isn't broken?

Lunch: 1:15pm
Lunch was a quick throw-together meal with veg, grain and protein:

 Super easy and super delicious. It may look a little plain to some but I crave plain foods on the regular!
 Millet + steamed greens + mixed fur beans + lentils

Snack: 4:00pm

Came home, realised I was STARVING, fixed up a snack of fruit and soy milk!



Dinner: 6:50pm
Dinner was an old favourite where I don't have to put too much effort in and can get other stuff done while it's cooking:

 Roast veg (pumpkin, potato, parsnip, swede and sweet potato) with spinach and lentils.

After dinner I had a square of 90% cocoa Lindt chocolate- yum!

Frozen Mango Cheesecake!!

Who likes mango?

Who likes cheesecake?

Who likes the combination of both of these amazing things.... for breakfast?

If you answered no to any of these questions there is something seriously wrong with you try this recipe out just in case!!!
See? There's even a life quote written just for this!!

Now that we've straightened that out let's move onto the tastiest breakfast you will have all week! (unless you're like an amazing breakfast chef who makes the ultimate breakfast every single morning).

And yes, it may or may not feature mango... and some cheesecake-y flavours ;)


That's right! Right there is a picture of super creamy, fresh, sweet frozen mango 'cheesecake' atop a fudge-y oat base perfectly offsetting the refreshing mango and creating interesting contrasting textures for the mouth to experience.

Well that got weird quickly.

Anywho- what I'm trying to say (through my terrible food blogger description) is this creation is delicious and healthy enough for breakfast... on the daily... forever. (I seem to be on a bit of a cheesecake kick lately? Remember my choc cheesecake in a jar?

Filled with fruit, yoghurt, oats and healthy fats and yet you would question the health-i-ness of this recipe after your first bite!

Ok, I know, enough rambling right? Let's just move right onto the RECIPEEE!


Frozen Mango Cheese-cake!

Ingredients:
3/4 cup rolled oats
1 heaped tablespoon oat bran
1 teaspoon chia seeds
2 tablespoons coconut butter
3 tablespoons almond milk (or any milk)
1 chopped, frozen banana
1 cup chopped, frozen mango
3/4 cup greek yoghurt


Method:
1. Place the rolled oats, oat bran and chia seeds in a bowl. Stir to combine:
2. Place the coconut butter and almond milk in a small bowl and heat in the microwave for 30 seconds or until melted and smooth:

3. Add the coconut butter mixture to the oats and stir to combine:
4. Place the oat mixture into a small bowl and press down to form a base:


5. Place bowl in freezer
6. Meanwhile put the banana, mango and greek yoghurt in a food processor and process until smooth:

7. Retrieve your base from the freezer and top with 'mango cheesecake'


8. Flatten the top to make an even covering, wrap in glad wrap and pop back in the freezer for at least 4 hours, preferably over night (make night before for breakfast!)

9. When it is time to eat your creation, remove glad wrap and enjoy!!! (maybe leave in the fridge for 20-30 mins before hand to soften up a bit if you prefer a softer texture)

Et Voila!
 Creamy, coconutt-y, delicious!
 Definitely a breakfast to remember!
 And I'm not going to lie- I found it quite hard tog et through all this, which is strange because it's a normal amount of breakfast for me? It must have been all the chewing/ melting in my mouth (took me a good 15-20 mins to eat!)
 And eat I did!
