Great big bowl of Mexican!

It's no secret.
I am a Mexican food fanatic!
Give me a choice between tacos and anything... and I will pick tacos.
Ask me what my favourite spice is and I will answer cumin (cinnamon doesn't count because it is not a spice.. it is a gift from somewhere magical).
Tell me beans are becoming endangered and I will cry. And then probably rush to the grocery store to buy every last jar of beans. And all the dry ones too.
So yes, I do love Mexican food.
 I'm sure it will surprise you then when I casually strolled raced into the kitchen, relatively hangry and decided that to satisfy my raging belly I needed to fill it with a big Mexican feast!
I wasn't sure I wanted tacos exactly, or nachos for that matter, and I'm still not entirely sure what a burrito is (Still looks like a taco to me!) so I decided to combine all my Mexican food loves and create this amazing bowl of awesome:

And just because I'm super cool- I'm gonna share with you this random mish-mash of food  recipe!

To begin my Mexican rice bowl I placed some cubed pumpkin (1/4 cup), diced onion (heaped tablespoon), 1/2 teaspoon garlic and 1 teaspoon of olive oil in a non-stick fry pan over medium heat for around 10 mins, stirring frequently:
I then added in 1/4 cup diced capsicum, 3 sliced button mushrooms and 1/4 cup corn, cooked for another 10 mins, stirring frequently:
When the pumpkin was tender and cooked through I added 1/4 tin drained red kidney beans and 1/4 cup lentils as well as 3/4 cup water and 2 heaped teaspoons reduced-salt taco seasoning.
After that had bubbled away for about 3-5 mins I added in some pre-cooked brown rice and some spinach:
Stirred to combine and cooked for another minute before popping in a bowl and topping with some vegan cheese and microwaving for 1 minute to 'set' the vegan cheese.
Once the bowl was out of the microwave and cooling, I mashed 1/2 an avocado with the juice of 1/2 a lime and then topped it all off!
Et voila!!

I cannot begin to describe how great this tasted and how satisfied I felt afterwards!
My inner Mexican was extremely happy :)

Guacamole yay/ nay? I used to hate guacamole and sour cream and so my nachos were pretty much chips and cheese... so glad that's changed!

  1. These are some great tips on Mexican Food. I never thought about mixing Mexican foods to make a delicious dish like yours. So far, I have been eating at Taco Bell because its kind of ready made food. After reading your article, its time to become a Mexican Chef as these low-carbs diets are definitely going to help me.

      I'm so glad you like the recipe!! Definitely time to become a Mexican Chef- such great flavours!! And a low carb bowl is sometimes just what we need!! :D
