Always the optimist!
In case you haven't had the best week so far, I have a recipe for you that will make your day...
Above are 5 little truffles of heaven.
Or, more precisely; oats, blueberries, lemon and coconut!
I seriously think lemon and blueberries (and even coconut) is one of the best combos around. Now peanut butter and chocolate, as well as peanut butter and banana also make my top list, but lemon and blueberry... not much can beat it.
And this morning? I was craving that magical combo!
Coconutt-y Lemon and Blueberry Truffles!
Ingredients:
1/2 cup rolled oats
2 heaped tablespoons oat bran
1/4 vanilla pod scraped (or a few drops of vanilla extract)
1/4 lemon zested
1 teaspoon lemon juice
1 heaped tablespoon coconut butter
2 tablespoons (more or less depending on consistency of truffles) of almond milk (or milk of choice)
Small handful fresh/ frozen blueberries
Method:
Step 1. Place the oats, oat bran, vanilla seeds/ extract, lemon zest and juice into a bowl and stir to combine:
Step 2. Place the coconut butter and almond milk in a small bowl and microwave on high for 30 seconds (watch to make sure it doesn't boil over):
Stir to combine.
Step 3. Add the blueberries and coconut mixture to the oats and stir with a spoon to combine:
Step 4. Using your hands, roll into balls and place on a plate lined with baking paper:
Step 5. Place in the freezer for at least 20-30mins to harden.
In the meantime, you should definitely- and I mean definitely- make this chocolate 'soft serve' to go with your truffles for the ultimate dessert for breakfast experience!
Ingredients:
1 chopped frozen banana
3 tablespoons greek yoghurt
1 tablespoon choc protein powder
1 heaped teaspoon raw cacao powder
Method:
Step 1. Place all the ingredients in a small food processor:
Step 2. Process until smooth and creamy:
Step 3. Spoon into a bowl/ ramekin/ mug and place in the freezer until ready to eat with the truffles:
After 20-30 minutes or so, remove your truffles and ice cream and enjoy one of the best and most decadent tasting breakfasts you've most likely had in a long time!
Trust me when I say this DOES NOT taste healthy!
The subtle flavour of coconut in the truffles mixed with the sweet blueberries and the tangy lemon create the perfect balance of flavours and leaves you wanting more as it is not too rich at all.
Accompanied by this amazing imitation of rich chocolate ice cream and you have yourself a winner!
Filled with the goodness of wholegrain oats, fresh fruit, antioxidant filled cacao powder, all the benefits of coconut, protein powder and greek yoghurt for staying power... deceptively healthy and a great way to start your day!

Being an Indian, I totally love savoury breakfast. I could never have corn flakes or Granola or any other sweet breakfast. But after i discovered smoothies and overnight oats, I alternate between savory and sweet.

DeleteI definitely think I should keep giving savoury breakfasts a go because I'm sure I would enjoy them! I just always have a raging sweet tooth in the morning for some reasons. Old habits die hard (looking at you sugar-laden cereals from me childhood!)
