Coconut peach microwave bowl

Hidy-ho everybody! Guess what I've got.....
A RECIPE!
A really yummy recipe that combines all sorts of fabulous flavours. It's got peach, it's got coconut, it's got a slight cheese-cakey taste from greek yoghurt. Tick, tick, tick!
I teased you with this pic a couple of days ago:

Coconut peach microwave bowl:
Ingredients:
25g coconut flour
15g rolled oats
5g oatbran
pinch of bi-carb soda
1/2 teaspoon baking powder
1/3 cup greek yoghurt (optional- can add an extra 1/2 cup of milk instead)
chia gel (1/2 tablespoon chia seeds mixed with 2 tablespoons milk- I used oat milk)
1/4 cup milk of choice (I used oat milk)
1/2 peach, chopped

Method:
Step 1. Place the dry ingredients in the bowl you'll be using to microwave and stir with a fork.
Step 2. Add the yoghurt, chia gel and milk and stir to combine. (don't stir too much)
Step 3. Stir in the chopped peach:
Step 4. Flatten down the top:
Step 5. Microwave on high for 1 minute. Check. Microwave for another minute. Check. Microwave for another minute. Check. Keep checking until the top is not sloppy. I micrwaved mine for 3 minutes and 30 seconds.
Step 6. Top with anything you like (I decided on some cashew butter) and leave to cool for 10-15 mins.

Step 7. EAT.
It may seem quite dry at first, but as soon as you put that first fork-full in your mouth it will literally melt :)
The peach goes all nice and soft and sweet, perfect with a melted nut butter and tangy cheesecake flavour!

It's also fabulous paired with ice cream. Banana ice cream that is (1 frozen banana whazzed up in a food processor)
It seriously feels like you're eating a dessert for breakfast. Minus the sugar, butter, eggs and pump up the protein, fiber and deliciousness!

The month that was Ausgust and breaking news!



Wow, it seems only last week that I was writing the month that was July post! Time flies people, time flies! Any-ho, you're probably all wondering what this 'breaking news' is, well, you're going to have to wait until the end of the post to find out! (Or simply cheat and scroll down because it's not like I have security cameras on all of my readers computers... duh. duh. DUH! just kidding :D)

So August! August started with a bang! Well an internet bang that is! That was a scary time people- I didn't think I'd make it through. But I did. Now I sound like Bear Grylls
Yep. Definitely same sort of situation
I came back a few days later with breaking news of internet and shocked you with a long list of food pictures!
 The next weekend the internet was lost again :)
This was also the month of no running- and no I still cannot run (it's killing me!) Instead of dwelling on my heartache, I instead professed my other love of all things food!

Lastly, in the month of August I ate a lot of nut butter (I think I went through 3 jars :)






Now onto the breaking news! (Or onto the breaking news first if you scrolled down after reading the intro :)
So I have had really long hair for ages. Like super long. This is me last year:


 Now, I don't know why but yesterday after I had brekky, I decided I needed a change. I was thinking about chopping the lucious locks off for a while and I guess yesterday was the day to do it! (really, my hair was death from about my shoulders down- about 30cm of hair) My hair's really thick too, so I thought shorter would be much better for the up and coming Summer. So I told that to the hairdresser, showed her some pics and away we go!

Wait! I have so much hair, it's all one length, all one colour- can't we do something with it? I asked the hairdresser. So we tied it in a pony and chopped it cleanly off to be donated to the breast cancer foundation to make a wig (or three knowing my hair) and here is the result:
 I LOVE IT! The first time I ran my fingers through it was soooo weird. But I love it. Especially when I put it in two little pig-tails :)

That same day (after a wash and blow dry straight) I went swimming :) So I washed it again and it dried curly. Still looks good though:)

So that was my breaking news and that was also August!

Lovin'on the breakfast front!

Hello friends!
Today I thought I'd create a post dedicated to breakfasts, because last week almost every brekky I consumed was deeee-lish!
I started off Monday with a simple-pimple brekky (Monday is the start of the week- a 'no thinking required' brekky is a must!) of two wholemeal crumpets topped smothered in cashew butter with a berry delicious smoothie (I couldn't help myself)
 The smoothie was simply 1 frozen banana, 4 large over ripe frozen strawberries (I bought a big punnet on the weekend) and a handful of frozen black grapes (just coz I thought they'd be good in a smoothie:) some greek yoghurt, oat milk and chia seeds- done!
 I love crumpets and hadn't eaten one for like 2 years prior to buying a wholemeal packet and freezing them a few weeks back.
 Yum!
Either Tuesday or Wednesday (I forget) I made oats :)
Using my sneaky little nut butter trick:

 I topped my bowl off with some banana cinnamon steel cut oats:
 With a side of strawberry (same strawberries as before- not frozen) yoghurt (cut up strawberries+ greek yoghurt)
One of my absolute favourites of the week was a banana mango thickie (extremely thick smoothie) topped with some cashew butter granola:
 In the smoothie went 1 frozen banana, 1 handful frozen mango chunks, 2 scoops of greek yoghurt and a splash of milk= super creamy deliciousness:
 Topped off with granola, similar to this one (kisses fingers like an Italian) perfecto:
 This definitely filled me right up!
Now onto my favourite breakfast of the week! OIAJ!
Choc protein overnight oats in an almost empty peanut butter jar with a side of banana yoghurt (1 banana whazzed up in greek yoghrut)
 The OIAJ were like eating a super rich, indulgent nutty dessert! To make:
fill a peanut butter jar about1/2 way up with muesli. Mix together in a seperate bowl about 3?4 cup milk, 1 scoop choc protein powder and 1/2 tablespoon raw cacoa- microwave for 40 seconds- 1 min, then stir until combined.
Add to jar of muesli, shake with top on, take top off and place in fridge overnight!


 Soooo good- I also nearly didn't finish this one it was so filling- but it tasted too good not too... I'll suffer through it! ;)

Thinking Out Loud!

Hidy-ho folks! In the words of Amanda at Spoons- Thursdays are for Thinking out loud, and that's exactly what I'm gonna do!

1.Recently my organisational skills have been through the roof! I do so much in a day and I feel so accomplished. It does make me wonder though, if I always have to do something everyday to be organised for the next- aren't I still doing as much work as I would for that day, just a day in advance?  (Did you catch all that- or should I say it again? ;)
I'm mainly being organised because of the amount of tests and assignments piling up, for example:
2. I have to write an exposition of a novel for English. It can be any genre, any style, anything... just 500-1000 words and and exposition. I wrote my first draft and I tell you what... I really want to finish this story.. I should probably think of a title first though... does anyone else find the titles to be the hardest part of writing a story, or is that just the perfectionist in me?


3. We've all started feeling the pressure at school and I was talking to one of my friends who was almost having breakdown about the amount of work we have to do. She decided that on the weekend she was going over to another friends place to play Lego... because she physically needed a day to be a kid again. Come on school's- is this not proof enough that you push us too hard!?! :)

4. The other day I knew Spring was coming. How? Not by the birds chirping, or the longer days but by the smell. Ever since I was young, memories, seasons and occasions were suddenly brought back to me by a familiar smell and I remember being a bit confused and asking everyone if they could smell Christmas as well, or was it just me? I think I just have an over sensitive smelling sense, the same way my mum has bat ears.
5. I came across this fact a few days ago and thought it was the sweetest thing ever:
 I mean, come on? How awesome is that! I wouldn't mind someone searching to find the perfect something for me; pebble, rock, diamond- I don't discriminate :)

6. On the subject of love and relationships (we were sort of on the subject ;) this is me right now:
I tell ya, if my appetite was decreasing a few weeks ago and I thought I was going to become one of those people who never ate.. that changed! Maybe I'm growing again? Yewh let's go with that- all I know is the beast needs to be fed!
